Does anyone have a Fresh Respberry Pie Recipe?

I don't want a baked Raspberry Pie---which unfortunately is all I've run across on the internet sites, but rather a cream-type. I used to have a recipe that called for lots of raspberries, raspberry jello powder & I think whipping cream (no Cool Whip please) among a few other ingredients, but mislaid or lost it.

What I wouldnt do for some fresh raspberries to make a raspberry custard pie.oh my...Just make regular custard pie add lots raspberries..

Best as I understand the difference between pico and salsa is that pico isn't cooked at all and uses no vinegar. So the closest I have come to pico (and it isn't real of course because it is cooked when canned) is a modification of the NCHFP Tomato and Green Chile Salsa. I used jalapenos instead of chilies, left out the garlic, cumin, subbed cilantro for the oregano, and used lime juice for 1/2 the vinegar called for. Drain well and chill well before serving. I hoped someone would offer a tried and true recipe for you. I can't because raisin pie has never been a favorite of ours but I see there are many "favorite raisin pie" recipes available via Google. In theory you could can any of them as long as you don't include any of the cornstarch or flour they call for but use Clear jel instead. You can process the plain fruit in a sugar syrup and thicken as you wish when making the pie or you can process pie filling, but the only approved thickener is ClearJel. I've linked to the NCHFP page for pie fillings. The one thing I would say is these pie fillings are way too thick, downright viscous. You can easily reduce the amount of ClearJel. It doesn't affect food safety and it's cheaper. It's probably worth it to do a single quart as a test just to see how you like the consistency and then do multiples. party_music50: Recipe sounds good! I have been SO disappointed though when the berries this year from the first year after planting were so 'blah!" No flavor or tartness at all... I am SO upset! My memory it seems they were rather tart when we kids ate them. Are your elderberries tart or have any real flavor at all? Someone said the first crop after planting will be that way but it is a mystery to me...! If the same next year, those bushes will be dug out; the bushes grew from the 18 in. twigs planted last spring to bushes over 8 feet tall this year & full of blooms & tasteless berries.... no way would they ever be used in a pie... no flavor at ALL!! Birds even left them alone! Do you have a special/easy way to glean the berries from the clusters ? I also have ground cherries which come up from seed all over every year & I love to use in pies but they are a bit on the bland side also so I use a bit of lemon juice in the pies also... no sugar needed! Now those are REALLY labor intensive to pick up the individual husks from the ground, take each berry from the husk, etc.!! Have you used them also? I live at 5200 ft. in a high desert area; temps get below freezing most winters, summers in the 90's & low rainfall (except this year!!)

Here is the recipe I use for my Black Raspberry cream pies.

Raspberry Cream Pies

2 baked 9 inch pie crusts

Raspberry Filling
1 cup water
1/2 cup granulated sugar
1 T. cornstarch
1/8 teaspoon salt
1/4 cup water
1/4 t. lemon juice
1 3 ounce box raspberry Jello
3 cups fresh raspberries (I use the black ones)

Vanilla Filling
3 cups milk, scalded
1/2 cup cornstarch
1 1/3 cups granulated sugar
1/8 t. salt
1 t. vanilla extract
3 egg yolks
1 cup milk

Raspberry Filling Directions
Heat the 1 cup of water and sugar. Mix the cornstarch, salt, 1/4 cup water and lemon juice. Add to water sugar mixture. Boil until mixture is clear. Add the raspberry Jello and stir to dissolve. Add raspberries and let cool.

Vanilla Filling Directions

Place 3 cups milk in kettle and heat to scalding.

Mix cornstarch, sugar, salt, vanilla extract, egg yolks, and 1 cup of milk. Slowly blend into hot milk, stirring constantly until thick. Cool.

Pour 2 cups vanilla filling into each pie shell. Place 2 cups raspberry filling on top of vanilla filling.

Let cool and serve with whipped cream on top.

Just a tip--you can always sub real whipped cream for Cool Whip if you find a recipe you like except for the fact it calls for CW. I do it all the time. And unless the CW is the only sweet ingredient in the recipe, I use UNSWEETENED whipped cream to cut back a bit on the sugar. Works fine, and tastes much better than a bunch of chemicals and artificial flavors
