I have had two electric pressure cookers. One an off brand and one a well known brand. Not worth the expense, IMHO. Moisture caused both of the electrics to quit working. I'll stick with my two sizes of Rival old faithfuls.

Pressure cooker makes the best pot roast. I have been told a slow cooker will do the same. I really need to try it. I miss my home cooking.

No, they are not. It's a question of size. Pressure cookers are smaller. As a result, they heat up, and cool down, faster than a pressure canner. However, the heat up/cook down times are factored into the directions for any particular canning recipe. If you can in the pressure cooker the food will be underprocessed, and possibly unsafe. The bottom line is, you can cook in a pressure canner, but canning in a pressure cooker is not recommended.

Difference between pressure cooker and pressure cooker/canner?

"Pressure canners come deep enough for one layer of quart or smaller size jars, or deep enough for two layers of pint or smaller size jars. The USDA recommends that a canner be large enough to hold at least 4 quart jars to be considered a pressure canner for its published processes. " If you go to the Presto site, nowdays you will see they only list the larger size as canners. They have 18 quart and 23 quart. Anything smaller is under cookers. http://www.gopresto.com/products/products_search.php?search_value=58&operation=Search&search_type=category Here is a link that might be useful: National Center for Home Food Preservation

Hey, it's no bother. ;) As to the racks, I wouldn't worry about them as long as it is a metal plate of some kind with holes in it that will keep the jars from sitting directly on the bottom of the canner. That is about all any of the racks do in a PC - space the jars up off the bottom of the pot. Your bigger concern with a canner that old will be the accuracy of the gauge. They are supposed to be tested annually and one that old will either have to be tested or replaced or the canner converted to a weighted one with the 5-10-15 lb weight set. You may also need to invest in the new gasket set for it. As for terminology, you can find most any thing you'd need in the How To Use a Pressure Canner publication from NCHFP. Hope this helps. Dave

pressure cooker vs pressure canner

You can cook in a pressure canner. Many of the bigger ones are made of aluminum, though, which is reactive, and you might not want to cook a highly acidic recipe in it. If you think you might be doing pressure canning a lot, you might want to consider WAFCO's All American line. They are built like a tank and will outlast you--your great grandkids will fight over it. Sorta pricey, though, but absolutely top quality. I had the 921, and gave it to a relative and bought the 930. The 921 was fine, but it could only process 7 quart jars at once; the 930 can process 14 quart jars at once, so it nearly doubled my efficiency. They are available at different internet outlets, with some (but not much) discounting. Here is a link that might be useful: wafco all american canners

What would be the advantage of an electric one?

I absolutely love my electric one! Got it from HSN, it is a Wolfgang Puck and I use it at least once a week. I like the timer on it, set it and let it go! Short Ribs, pot roast, stuffed cabbage, country style ribs.....YUM!

I love mine. I have made ribs, stew, beef brisket, soups and pot roast. I like my crock pot but the pressure cooker gives the meat a better flavor.

Love mine, too. I got mine from QVC. I don't use the non-electronic one anymore. I liked it well enough to buy a second one for our second home. Someone asked what is the advantage? You can set it for a certain number of minutes and leave it alone. It will turn itself off after it counts down the number of minutes you set it for. It does not start timing until it reaches pressure.

Would any of you mind posting a few recipes?
My step-father bought a Logastina stove-top pressure cooker and she's terrified of it. She wants me to take it and try making something with it.

I've been using pressure cookers since I got married in 1979. My husband had one (he's an excellent cook) and taught me to use it. It makes the BEST EVER mashed potatoes. Anyhow, I somehow managed to lose the pressure top. Looked everywhere and couldn't find one. I found out that only two companies still make pressure cookers-Rival and Presto. I bought a second one and have been using it ever since. And I'm very careful to always put the top in the same place between uses. I have no experience with electric PC's.

My husband's grandmother bought me one for my birthday and the only thing I have used it for is artichokes. I clean them up, toss them in with a cup of water and six minutes later they are done!
I would also love recipes for stew and roasts.

When you make a roast in a PC, do you brown it first?

Susan, I flour, salt and pepper and brown my roasts right in the pressure cooker. If I am making veggie soup I pressure cook the roast and then after it is finished cooking I cut it in small pieces and add the veggies, and juice to finish. It is so good..

I had my stove top one blow up twice. What a mess.. Still, I love my pressure cooker I would just like an electric one now.

I've done a couple recipes from missvickie dot com. It seems to me that I mostly use my pressure cooker as a method of cooking, not so much as a recipe thing like you would a bread maker. I just throw my usual pot roast stuff in it or fresh green beans or whatever....it's just a quick way of cooking something that would normally take several hours.

I got my first electric pressure cooker so that I could come home from work, start my food cooking, and go take a nap. Couldn't do that with a stove top kind. And yes, I brown my meats first. And it's very easy to make gravy right in the pressure cooker after the meat's done.

Beef and Barley Stew

2 lbs chuck or round roast cut into 1 1/2 cubes
1 cup baby carrots
2 stalks celery cut 1 1/2 pieces
1/3 cup pearled barley
1T olive oil
4 tsp of beef base mixed into 4 cups water
1/2 cup red wine (I use another 1/2 cup of tomato juice)
2 T tomato paste
1/8 tsp ground allspice
1T minced garlic
2 bay leaves
1 tsp dried thyme
1 cup frozen peas
1 onion sliced thin
8 ounces mushrooms halved
2T corn starch mixed into 2T water
salt and pepper to taste

add all ingredients except peas, onions, mushroom and corn starch in the pressure cooker, lock the lid. Set cooker to high and cook for 20 minutes.

Let pressure release naturally for 5 minutes before quick releasing the remaining pressure and remove lid.

Set cooker to high or brown with lid off and add peas, onion and mushrooms. Simmer for 5 minutes

Pour corn starch mixture into simmering stew slowly until thickens to your liking. salt and pepper to taste

For more traditional beef stew replace the barley with 8 halved new potatoes.

Are the electric pressure cookers safer than the stove top type? I've always used a stove top and always a little scared it will blow up. LOL
