Christmas cookies, anyone?

I always used to bake cookies for Christmas. Last year was the first year I didn't, because I was just to busy getting things ready for my boys to come home. This year, they are going elsewhere with their girlfriends, so I am going to bake some to send to them.

What are your favorite Christmas cookies to bake? I love Koularia (sp?), Oatmeal-Raisin-Nut and plain old chocolate chip. I also make something called Sesame Seed Crisps that don't ship well, because they are so delicate, so I don't send those to people much. I also love making "Forgotten Cookies", although they are a pain. I bought copper bowls just to make those, since they are basically just a meringue with nuts and chips.

Every year,I make Fruit filled spritz, and a drop cookie with dried apricots and coconut. I make others but those are my favorites.

Our favorite ones are the rolled and cookie cutter one...with the glazed frosting.

I always make a few other cookies but the decorated ones always are the first to go.

I make chocolate fudge and peanut butter fudge each year too.

Then whatever fun easy thing I can find.

Trouble is...I shouldn't be eating them but I love that stuff.

My friends and I do this type of gift exchange too. One person gets to pick a gift. The second person either gets to pick from the first person or a new gift. The third person and so on can take a new gift or a gift someone else has gotten. They just can't take back the gift they already had. It is quite funny to see the same gift "stolen" many times especially if it involves husbands and wives. The wife had a gift she likes that was stolen and she tries to coerce her husband into taking the gift back when all he really wants is another gift. We never laugh so much as when we do the exchanges this way. I look forward to this every year not so much for the gifts but for the good humour. Anne

Miele Oven - baking problem

I did a long post over a year ago that explained how these electric ovens were different and why they were worth it to me. I didn't keep a copy but will try to reprise it here. When I had to switch out my oven, I wanted something that moved it tech-forward so to speak. For the past 20 years we had conventional heat -- roast, bake etc from a single heat source in the bottom of the oven. Then convection via a fan in back was added. Now, many ovens have both and you can use either mode. In a high end oven like the Wolf, there are two fans that are said to move the heat more evenly through the cavity. But again, you have a single, bottom heat source with/without convection. At the other extreme you have the Turbochef which combines high speed convection though multiple openinings in the bottom of the oven (vs a fan in back) with microwave plus the broiler element -- all working at the same time. Also, there is a different cooking system which is food-driven rather than cooking driven. F.ex. your setting for rolled boneless leg of lamb would be something like lamb, leg, boneless and then the oven cooks it automatically and tells you how long that will take. I made a video of biscuits baking in the Turbochef and it's fascinating to see how it works. In between -- which is where the Miele and other so-called European convection ovens fall plus some Brit range ovens like Brittania and Rangemaster) -- you have conventional heat from the bottom and/or convection plus the ability to combine one or more with heat from the top broiler element. So you have a choice of 1 or 2 heat sources with or without convection. Those are the cooking-driven settings. F.ex. with Auto Roast, if you notice the broiler element comes on in combo with the convection and bottom heating to do the searing. Plus Miele has Masterchef settings -- a whole system of food-driven cooking choices. You can use either system. I don't use MC often as I usually want more control. If you just want a high end oven that has more a conventional/convection system then go for something like the Wolf. I switched out to the Miele incurring additional cost for the oven itself and for carpentry in the cabinet after 2 years in oven h*ll. I was insistent on an oven that vented at the bottom (not at the top where exhaust heats the electronics), one that could withstand power outages, gave me digital readouts, had a great probe, rotisserie and was more advanced in the way it handles heat settings. I decided against self-clean because I have semi-gloss painted cabinets. I also feel the Perfect Clean is greener but that's a personal choice. I'm an oven cook. I use it far more than the cooktop. When I make the no-knead bread baked in the Le Creuset pot, that pot lid is so hot from being preheated on surround that it burned a wooden cutting board when I put it down. I throw (literally) the bread in the pot and it comes out perfect and cooks 10 minutes faster than the recipe. I can load up that oven with the additional racks while one thing is cooking and set the second timer for something else. The probe (in a whole tenderloin/filet I insert in lengthwise smack in the center of the thickest end) and cook on autoroast. It is amazingly delicious (I marinate it overnight in Cognac and shallots) and comes out perfectly medium rare at 140. I don't see switching out a workhorse like that which is so versatile oven for something that does less but it's the oven I wanted. If may not be the one someone else wants/needs and these days, price matters and this is not the only good oven on the market. There are other great ovens without the complexities. But I'd sure want to have it functioning perfectly before making a decision to get rid of it.

I said 6 qt pressure cooker bottom, it is 4 qt above for the Toffee! Sorry! This recipe came from Better Homes & Gardens probably in about 1962-3.Buttery peanut Brittle- 4 qt heavy pan(bottom of old pressure cooker works fine)& candy thermometer is a must! Lightly butter 18 in by 2 ft piece of foil put close to where you are cooking so can quickly dump it out. 2 c white sugar 1 c Light Karo syrup 1/2 c water 1 c butter 2 c peanuts or mixed nuts(I use unsalted or lightly salted) 1 tsp baking soda measured out into spoon(level) Place sugar, Karo & water in 4 qt pan on high heat stirring constantly,when mixture is boiling,add the butter. Now with clean damp dishcloth over fork changing cloth to different area each time to get crystals, wipe down inside of pan just above the cooking mixture, put the candy thermometer on side of pan opposite from you so you can read it being careful to get it off the bottom of pan,(could break) should be able to get the wooden spoon under where it's at! Keep stirring whole time add nuts when it reaches 280degrees will get harder to stir but keep it going won't be long now. When it reaches 300degrees take the thermometer off quickly dump the soda in stir around quickly & pour out on buttered foil. (It says 305 degrees but I find by time I've got it on foil it's plenty done. I like it light not real molasses like as when over- cooked take wooden spoon & spread out as thin as you can. Let sit until it is cold. lift up & break in irregular pieces store in double zip loc bag. That is 1 gal Zip -loc bag inside another. it stays nice and fresh in fridge, if fact couple of yrs ago I found some that was months old & it was fine.Mom had been in & out of hospital ! Anyway candy is a little tricky so I tried to include tricks I use to get it to come out. Friends I've taught are still making candy but it's much easier in person to tell them than trying to remember all this. (I couldn't type at all until GD was 5 & wanted to know why grandma wasn't on computer.) As I don't have anything on my recipe card but the recipe, rest is school of hard knocks tho I almost never have had to throw anything out. With candy always read whole recipe before you start & have everything measured out & ready before you turn stove on. If butter is to be cut up & you are supposed to be stirring it's easy to burn something. If you ever caramelize sugar you know what I mean! Anyway bedtime, if you have any questions ,I'll answer them. About fondant- takes a couple of weeks to ripen then you need a cold marble slab to work it so it gets creamy, lot of work! But I could find my recipe if you have all that. Time & marble- I cleaned my long makeup section of marble in bathroom with Comet & then dishsoap & polished with clean dishtowel & dumped the ripened fondant out to work it takes a lot of energy. You do get a lot of candy tho.

I always make Chocolate Chip Pudding Cookies and Russian Teacakes. We make a dessert roll that has come to be called (affectionately) Ducks because of the shape they take on when baking. And we always try a new cookie recipe as well.

Pralines

1 stick margarine
1 stick butter
place in sauce pan and turn on low to melt slowly. While this is being done line a large cookie sheet with aluminum foil.

1 box graham crackers (I can get almost 2 trays out of a box of crackers)
Place graham crackers close together until you have covered the whole cookie sheet.

1/2 cup brown sugar
add to butter mixture, stir until the sugar is mixed in then turn up heat and bring to a boil. When boiling stir constantly for 2 minutes.

Remove from stove and add stir in 1 teaspoon of vanilla (watch out it will spit). Then pour this mixture over the cracker slowly spreading with a spoon to cover all the crackers.

Then sprinkle chopped pecans over all; approximately 1 cup. Cook for 14 minutes in a 325 degree oven.

When done take out and lift by foil and place on counter. When cool peel from foil and break into pieces.

*If when you make the sugar mixture it doesn't get thick don't worry. Go ahead and spoon the brown sugar over the crackers and spread it around with a spoon to cover all. Pour any of the butter that is left over the crackers also. They will still taste the same and nobody notices the difference. I don't know why this happens since I have always cooked it the same way. Might have something to do with the weather, who knows.

These are some of my favorite bars, cookies, candies and quick breads that I've made over the years on my blog, recipes that are great for the holidays. I don't make them all every Christmas. Sometimes I alter recipes for Christmas (using Christmas candies, sprinkles, etc).

Some of these dress up a cookie tray, others just taste really good. Christmas cookies aren't just about flash for me - they need to taste good and be comforting so it's nice to throw on some basic chocolate chip, oatmeal, etc.

Welsh cookies are my signature cookie - I always make those. I love the Gingerbread Men too, that is a relatively new recipe for me. Otherwise, I make a different selection every year. I've had to alter things quite a bit after learning my son was allergic to peanuts. I really miss the Four Chip Fudge and peanut butter fudge.

I like the Chocolate Chip Brownies for teacher gifts (I give a gift card but I like to make something to go along with it). They can be dressed up with Christmas sprinkles and they stack nice in those decorated treat bags you can buy in the dollar store.

Wow! Thanks for all the recipes! Believe it or not, I got most of my favorite cookie recipes from those Betty Crocker recipe cards that were so popular in the 70's. I got a subscription from a friend for Christmas one year, and I still have my favorite cards, although the container and the rest were donated to Goodwill long ago.

I use to bake a lot every Christmas and would send platters of goodies with my DH to the bank where he was a courier.When he retired 4 years ago the girls there asked him if he was still going to bring the goodies every year.LOL I did send them the first year after he retired but after that I stopped making a lot of sweets.I always made Pecan Crescents from a recipe that was given to me by a lady at church.They would melt in your mouth.That was the favorite that all the employees asked for.Usually Pumpkin and Banana Nut bread,fudge(the cooked kind not the marshmallow stuff)Date Nut Roll,Snickerdoodles and Toffee.All of my kids and some of the grands will be here for Thanksgiving so I am going to try to make some of their favorites tomorrow.I don't have my crescent cookie recipe with me so I don't know how those will turn out.

I always make Spritz, a little sugar cookie you roll into balls and press down with a glass bottom dipped in sugar and something we always called "Wallies" - a soft fruit and nut filled cookie (no citron or weird bits).

Soft Fruit Cookies

1 cup butter
1 and 1/2 cups brown sugar
2 beaten eggs
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 and 1/2 cups flour (reserve the 1/2 cup for dredging the fruit)
1 cup pecans - rough chop
1 cup walnuts - rough chop
1 cup filberts - rough chop
1 pound of dates - cut fine
1/2 pound candied cherries - cut into smaller chunks
1/2 pound green & yellow candied pineapple - cut in smaller chunks
(the candied fruit seemed kind of pricey this year - but I've often bought two of the 8 oz. packages of the cherry/pineapple mix and chopped down the pieces using the extra 1/2 cup flour to keep the sticky fruit from clumping.)

Mix all together in your largest electric mixer bowl.
Drop by rounded teaspoon. Bake at 350 for 10-13 minutes. Done when slightly brown at edges. Approx. 125 cookies.

None of my recipe copies call for greasing the cookie sheet, but I've always been a fan of parchment paper.

I used to bake several varieties, but now just one - our decorated gingerbread cookies.

DH and I don't eat sweets, and we don't need cookie trays for work anymore, but my 24-y-o son will not let me stop baking these! He comes over to color the royal icing and to decorate. His roommates, office mates, and girlfriend all think he's a genius.

He's actually baking the cookies this year on his Thanksgiving break.

I used to make many different kinds of Christmas cookies, now (like kat__wa) I only make Mexican Wedding Cakes and Spritz. One of my favorites is Rosettes, but I gave my irons to my DGD, and she makes some for me at Christmas.

Another favorite is Christmas Mice.
