Any tried & true bread recipes?

We are having a snow day here today so no work for me :) We are under a heavy snowfall warning.

I thought I would put on a pot of home made chili and make some whole wheat or white bread/rolls.

Wondering if any of you have some tried and true recipes to share?

Will have to start it pretty soon...I am going to put the wood stove on for heat so it should rise nicely.

Oh Taigen you have to make this!
I use 4 cups whole wheat and 2 cups white and it's great!
(do the oil first, in a measuring cup, then do the honey, and it will pour right out)

HONEY WHOLE WHEAT BREAD

3 cups all-purpose flour
3 cups whole wheat flour
2 pkg. active dry yeast
2 sp. salt
1 cup milk
1 cup water
1/2 cup honey
3 Tbsp. oil
1 egg

In large bowl, combine 2 cups all-purpose flour, 1 cup whole wheat flour, the yeast, and salt and mix well.

In microwave, heat milk, water, honey, and oil until a thermometer reads 120-130 degrees F (warm)

Add liquid mixture to flour mixture and stir to combine. Beat this batter for 3 minutes. Then, gradually stir in rest of whole wheat flour and enough remaining all-purpose flour to form a firm dough.

Sprinkle work surface with flour and knead dough, adding more flour if necessary, for 5-8 minutes until smooth and satiny. Place dough in a greased bowl, turning the dough in the bowl to grease the top. Cover and let rise in a warm place about 1 hour, until double in bulk.

Punch down dough and divide into 2 pieces. On lightly floured surface, roll or press each piece of dough to a 14x7" rectangle. Starting with shorter side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal and place dough, seam-side down, into greased 9x5" bread pans, making sure short ends of bread are snugly fitted against the sides of the pans. Cover and let rise in warm place until the dough fills the corners of the pans and is double in bulk, 30-40 minutes.

Bake in preheated 375 degree oven for 35-40 minutes, until bread is golden brown. Remove from pans and cool on wire racks. I like to brush the bread with butter when it's still hot from the oven for a softer crust.

These are my buns Taigen...

Plain Quick Buns

3/4 cup warm water
4 tbsp sugar
2 1/4 tsp yeast
1/2 cup milk
1 1/2 tsp salt
1 egg, well beaten
4 1/2 cups flour
3 tbsp melted butter

Put warm water and 2 tbsp sugar in a bowl, stir until dissolved. Add yeast and let rest 10 minutes.

Warm the milk, add melted butter and egg. Combine flour, salt and 2 tbsp sugar.
Pour milk mixture in a large bowl, add the yeast and the flour, a bit at a time. Knead well.

Shape into a ball, place in covered bowl and let rise until doubled.

Punch down dough, shape into balls, and place in greased muffin tin. Let rise again and bake 350 degrees 15-20 minutes.

Parmesan Sage Potatoes Daisy 4 large potatoes, peeled, cut into 8 wedges 2 tablespoons butter, more if needed 1 1/2 teaspoons dried sage leaves 1/2-1 cup Parmesan cheese, grated salt and pepper In a large saucepan, bring half a panful of salted water to a full boil over high heat. Add the potatoes and cook for about 5 minutes or until they are just beginning to become tender but retain crispness. Drain and set aside. In a large frypan, melt the butter over medium heat. Add the potatoes and sage, and cook 10-15 minutes or until golden brown, adding more butter as necessary. Stir in the Parmesan cheese, salt and pepper. Serve with chicken, pork or steak. and if you are hoping for something that is a little more seasonal, this from ruthanna is terrific: MRS. CHANDLERÂS POTATO SALAD (Ruthanna) 8 boiled medium potatoes (in jackets) 1 Â½ tsp. horseradish 1 cup chopped fresh parsley* 2 medium onions, finely minced or 1 onion and Â¼ cup minced chives 1 Â½ cups mayonnaise 1 tsp. celery seed 1 cup sour cream Â½ tsp. salt Peel potatoes; cut in 1/8 inch slices. Combine mayonnaise, sour cream, horseradish, celery seed and salt. Set aside. In another bowl, mix parsley and onion. In large serving bowl, arrange layer of potatoes; salt lightly. Cover with layer of mayonnaise mixture, then layer of onion mixture. Continue layering, ending with parsley and onions. DO NOT STIR. Cover and refrigerate for at least 8 hours before serving. Better if made the day before. Yield: 8 to 10 servings Recipe can be doubled or tripled. * - do not omit or decrease i love this recipe from my aunt and you don't need to worry about it possibly going bad in a short period of time. enjoy! APPLE COUNTRY CHICKEN Yield: 5 Servings 1 tsp Curry powder 1 lg Golden Delicious apple, Cored and chopped 1 lg Yellow onion, finely chopped 1 tbs Lemon juice 4 oz Mushrooms, sliced 1 tsp Chicken stock 2 c Apple juice or cider 3 1/2 lb Chicken thigh, skinned 1 tbs Flour Place curry powder in a wide frying pan and stir over medium heat until slightly darker in color (3-4 minutes). Add apple, yellow onion, lemon juice, mushrooms, stock, and 1 1/2 C. of the apple juice; bring to a boil. Rinse chicken and pat dry; add to pan. Reduce heat, cover, and simmer until meat near bone is no longer pink; cut to test (about 30 minutes). Lift chicken from pan; arrange on a warm platter. Keep warm. Blend flour and remaining 1/2 C. apple juice. Gradually add to sauce in pan, stirring; increase heat to high and cook, stirring until sauce is thickened. Pour over chicken. Thanks Linda - that's what had me confused, it just looks like an enriched yeast dough, some have orange rind, some lemon and orange rind, some have you pulverize the flesh of the citrus as well. Some have an egg wash only, some have an egg wash and sprinkles, some have frosting... We aren't going for authentic, since we don't know what that is, just a little mother/daughter time with the bonus of something new for our little (3 people as opposed to the usual 16) Easter dinner. King Arthur is definitely one of my go to sites for trying something new. And by the way, your "Mrs. Avery's Rolls" recipe has been my go-to for a long time now. Thanks for that and Happy Easter.

What is wrong with the poultry just tasting like poultry? I really dont understand why to manipulate it to make it taste like added things. With so much effort to disguise the flavor or make it taste like onion soup or some such, why even eat it in the first place? It just doesnt make any sense . Beef is one meat that I have found to become more lacking in any good meat essence. Rather than use it as a medium for seasonings I just prefer to not use it. For a while, I thought that the grass fed beef always tasted better, but lately that doesnt seem to be the case and I dont know why . A good piece of beef requires very little to be delicious. But I'm not finding much to love about that anymore. Just a personal preference, I guess. It should be what the other elements will dance around and not hidden in the background under an industrial strength mix or a packet of seasonings with all manner of enhanced chemicals and dessicated this and that. For a burger it begins with the meat and the bread. If you have to disguise your meat, you are starting at a disadvantage right there. And to laden the ground burger meat with bread crumbs weakens the burger concept even further. That better serves to extend a meatloaf. Of course, you can make a great meatloaf sandwich and the meat will be a soft meat. With a burger you are usually looking for a more sturdy piece of meat that really stands proud in the bun.

Hi Jas...that would be wonderful, thank you so much. I like the WW and hubby likes the white LOL! I won't use the white today so please don't feel rushed to type it out. I will try it another day.
