Any tried & true bread recipes?

We are having a snow day here today so no work for me :) We are under a heavy snowfall warning.

I thought I would put on a pot of home made chili and make some whole wheat or white bread/rolls.

Wondering if any of you have some tried and true recipes to share?

Will have to start it pretty soon...I am going to put the wood stove on for heat so it should rise nicely.

Oh Taigen you have to make this!
I use 4 cups whole wheat and 2 cups white and it's great!
(do the oil first, in a measuring cup, then do the honey, and it will pour right out)

HONEY WHOLE WHEAT BREAD

3 cups all-purpose flour
3 cups whole wheat flour
2 pkg. active dry yeast
2 sp. salt
1 cup milk
1 cup water
1/2 cup honey
3 Tbsp. oil
1 egg

In large bowl, combine 2 cups all-purpose flour, 1 cup whole wheat flour, the yeast, and salt and mix well.

In microwave, heat milk, water, honey, and oil until a thermometer reads 120-130 degrees F (warm)

Add liquid mixture to flour mixture and stir to combine. Beat this batter for 3 minutes. Then, gradually stir in rest of whole wheat flour and enough remaining all-purpose flour to form a firm dough.

Sprinkle work surface with flour and knead dough, adding more flour if necessary, for 5-8 minutes until smooth and satiny. Place dough in a greased bowl, turning the dough in the bowl to grease the top. Cover and let rise in a warm place about 1 hour, until double in bulk.

Punch down dough and divide into 2 pieces. On lightly floured surface, roll or press each piece of dough to a 14x7" rectangle. Starting with shorter side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal and place dough, seam-side down, into greased 9x5" bread pans, making sure short ends of bread are snugly fitted against the sides of the pans. Cover and let rise in warm place until the dough fills the corners of the pans and is double in bulk, 30-40 minutes.

Bake in preheated 375 degree oven for 35-40 minutes, until bread is golden brown. Remove from pans and cool on wire racks. I like to brush the bread with butter when it's still hot from the oven for a softer crust.

These are my buns Taigen...

Plain Quick Buns

3/4 cup warm water
4 tbsp sugar
2 1/4 tsp yeast
1/2 cup milk
1 1/2 tsp salt
1 egg, well beaten
4 1/2 cups flour
3 tbsp melted butter

Put warm water and 2 tbsp sugar in a bowl, stir until dissolved. Add yeast and let rest 10 minutes.

Warm the milk, add melted butter and egg. Combine flour, salt and 2 tbsp sugar.
Pour milk mixture in a large bowl, add the yeast and the flour, a bit at a time. Knead well.

Shape into a ball, place in covered bowl and let rise until doubled.

Punch down dough, shape into balls, and place in greased muffin tin. Let rise again and bake 350 degrees 15-20 minutes.

Add egg and mix to blend. Stir in orange peel. Carefully spread cream cheese filling mixture over batter in the pans. Cover the cream cheese filling with the remaining batter. Bake at 325 degrees for 1 hour or until bread tests done. Cool 10 minutes in pans before turning out on a rack to cool. Store in the refrigerator. I posted this long time recipe of mine on the Rubs and Marinades posting a week or so ago. Cuban Pork Tenderloin 1 Pork Tenderloin 2 Tbsp Cuban Spice Rub (see below) 1 Tbsp oil Preheat oven to 425 deg F Trim fat and silver membrane from tenderloin, and pat dry with paper towel. Rub spice mixture evenly all over the tenderloin. Preheat oil in large pan over high heat. Lightly sear tenderloin on all sides. Remove tenderloin from pan, place in baking pan, place in oven for 15 minutes. When tenderloin reaches 140 deg F remove it from oven and let it rest for 5-10 minutes, during which time the temperature should rise to 145 to 150 deg F. Slice 1/4" - 3/8" thick and serve with Madeira-Apricot sauce on the side (see below) Cuban Spice Rub: 1 paprika 2 ground red pepper 2 cumin 3 onion powder 3 garlic powder 2 black pepper 1 oregano (dried) 1 basil (dried) 2 parsley (dried) Madeira-Apricot sauce Ingredients: 1 jar Polaner All-Fruit Apricot preserves 4 oz apple sauce 1/2 cup medium-dry Madeira 1 medium onion (chopped) 2 tbsp butter Cook onions in butter until they are translucent, then add the Madiera, the apricot preserves, and the apple sauce and heat it until it is thoroughly bubbling. Pour into bowl and allow to cool to room temp. Note: For the apple sauce I often buy a package of single serving apple sauce cups (look for the ones with no added sugar) and use one of the cups to make the sauce. This avoids the problem I usually have where an opened jar of applesauce gets moldy before I use it all.

Parmesan Sage Potatoes Daisy 4 large potatoes, peeled, cut into 8 wedges 2 tablespoons butter, more if needed 1 1/2 teaspoons dried sage leaves 1/2-1 cup Parmesan cheese, grated salt and pepper In a large saucepan, bring half a panful of salted water to a full boil over high heat. Add the potatoes and cook for about 5 minutes or until they are just beginning to become tender but retain crispness. Drain and set aside. In a large frypan, melt the butter over medium heat. Add the potatoes and sage, and cook 10-15 minutes or until golden brown, adding more butter as necessary. Stir in the Parmesan cheese, salt and pepper. Serve with chicken, pork or steak. and if you are hoping for something that is a little more seasonal, this from ruthanna is terrific: MRS. CHANDLERÂS POTATO SALAD (Ruthanna) 8 boiled medium potatoes (in jackets) 1 Â½ tsp. horseradish 1 cup chopped fresh parsley* 2 medium onions, finely minced or 1 onion and Â¼ cup minced chives 1 Â½ cups mayonnaise 1 tsp. celery seed 1 cup sour cream Â½ tsp. salt Peel potatoes; cut in 1/8 inch slices. RECIPE: Wanted Tried and True ..Rye Bread

I obtained this from JoyceS' board several years ago. It is wonderful. The Best New York Rye Bread I find to make it lighter I always let it rise longer then what the bread machine allows. After the first kneading cycle, I will Reset my machine to start over (twice). A nice traditional New York Rye bread made much easier by using the bread machine. JoyceS's 1 cup plus 2 tablespoons warm water 1 1/3 tablespoons vegetable oil 2 tablespoons honey 1 teaspoon salt 2 2/3 teaspoons caraway seeds 1 1/3 cups rye flour 2 1/3 cups bread flour 1/4 cup vital gluten 1/4 cup dry milk 2 1/2 teaspoons active dry yeast Place all ingredients in to your bread machine in the order specified by your machine's manual. Set the cycle to Basic or White. Makes 1 1 1/2 pound loaf Note: What I do here is set my machine on the 'Dough Cycle'. I then form it to shape, let it rise some more then bake it.

Hi Jas...that would be wonderful, thank you so much. I like the WW and hubby likes the white LOL! I won't use the white today so please don't feel rushed to type it out. I will try it another day.
