Would you possible have her recipe? I'd love to have a recipe for squash pie, b/c each summer I have a bumper crop and would love something different to do with it.

You can use the recipe on the libby can just substitute the squash for the pumpkin. Any pumpkin pie recipe works..

My hubby cut the squash in slices, scooped out the seeds and peeled it. He then cut it up in small pieces and I cooked it with a small amount of water, ran it through a food mill and put in freeer containers.

I have two pies in the oven right now.. I will let you know how they turned out... They sure smell good.

I have 15 freezer containers from this one squash.

I have 3 big butternut squash I have to process and freeze when I get the chance. I always loved the flavor better than pumpkin for pies. Prettier color too I think.

This is the first I've ever heard of squash pie. It must not be a Southern thing, but I love squash and one of my DD's loves it, too, so I'm happy to have a lot in my freezer.

I agree with you, Marilyn Sue. Squash pie is so much better than pumpkin. Smoother and as you say looks better.
My Mom always made squash pies but I've forgotten which type of squash she used. I remember it was a big one and she'd cook and freeze containers of it and use them when she wanted to make a pie.

I made 3 squash pies today and were they ever good. I used a recipe from an old cookbook that was my Moms.. We have a neighbor that just had open heart surgery last week and his favorite pie is pumpkin so I took one to him. I barely got home and he called to say it was the best pie he has ever had..

Susie, what kind of squash did you use?

All I know is that it is called banana squash. It is about 3 1/2 feet long and 8" across when cut. It is the color of a cantelope and has a skin like it.
