Persimmon Pudding

1 1/2 c. sugar
1/2 c. margarine
3 eggs
1 t. baking soda
2 t. spices, combination of allspice, clove and cinnamon
1 c. flour
2 c. milk
1 t. salt
1 t. baking powder
1 pt. persimmon pulp

Rub persimmons through colander to remove the seeds. Beat eggs well and add to pulp. Add flour and other dry ingredients. Add milk slowly stirring mixture well. Put the margarine into a baking dish in the oven as oven is preheating to the baking temperature of 350 degrees. Pour excess margarine into the pudding mixture and continue stirring until smooth. Bake approximately 1 hour. Pudding will turn dark from the spices as it is baking. Pudding is delicious served with a dollop of frozen whipped topping or with ice cream.

There are persimmon trees that grow in my area. I have never made a persimmon pudding but have eaten them at church dinners and they are good.

I love persimmon pudding. When we were in the mountains there were persimmon trees and I picked them up every day until I had enough for the pudding. Sure is hard to get those seeds out!

WHITE CHICKEN CHILI

1 large sweet onion, finely chopped
Generous shake of garlic powder or 2 cloves garlic, pressed
2 Tbsp. vegetable oil
2 cans chicken broth
2 cans white beans (navy or great northern), drained
1 can green chilies
1/2 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper
6 oz. pepper jack cheese, shredded or in small cubes
1 lb. chicken breast, cooked and cubed
1 c. heavy cream
3 Tbsp. flour mixed with 1/4 c. softened butter

Saute the onion in oil until translucent. Add garlic, broth, beans, chilies and seasonings. Simmer 20 minutes over med. heat. Stir in cheese and chicken until cheese melts. Add cream and bring just to a boil. Just as it begins to boil, add the flour/butter mixture.

OK.....never seen or had a persimmon. What do they taste like? Sweet? Or tomato like? They grow in a forest, in what climate?

I have a "Standby Throw Together Recipe":

1 Lb Chicken Tenders
1/4 Cup of onions
1 Bag Frozen chopped veggies for soups
2 Cans Cream of Mushroom Soup
1 Cup Rice
Herbs what ever you please. I went low sodium on all ingredients.

Saute Chicken Tenders in Olive Oil with onions.
Remove and set aside.
In a Cassorle Dish Toss in Rice and stir in Mushroom Sauce. Add thawed veggies and stir. Top with Chicken dapping a little sauce on the chicken. I covered with foil and baked on 350 for 45 minutes.

I had a sour stomach that night and this hit the spot. Plain and simple. Just comfort for my tummy.

Gayle, do you cook the rice first or put it in raw? That sounds easy and good.

Honey Roasted Red Potatoes
Ingredients

� 1 pound red potatoes, quartered
� 2 tablespoons diced onion
� 2 tablespoons butter, melted
� 1 tablespoon honey
� 1 teaspoon dry mustard
� 1 pinch salt
� 1 pinch ground black pepper

Directions

1. Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray.

2. Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.

3. Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.

Here are pictures of persimmon trees & the fruit. They're a rather bland, soft fruit - similar in texture to a ripe fig, I think. Persimmon pudding is a popular recipe. Marilyn Sue's recipe sounds wonderful.

Dinner Rolls
The dough is made in a bread machine

Ingredients

3/4 cup water(adjust if needed)
1 egg
3 cups flour
1 1/2 tps salt
3 TBL butter
3 TBL sugar
3 TBL non fat dry milk powder
1 1/2 tsp yeast

Turn bread machine to dough setting. When it beeps, turn dough out onto floured surface. Roll into a rope . Cut into 12 pieces. Grease & flour muffin tins, makes 12 - 18. Drop pieces into tins, let rise 45 min. in a warm humid place. Then bake @ 400 for 12-15 minutes.

You can substitute Persimmon pulp into a pumpkin bread/cookies/rolls and it turns out well. We do every Thanksgiving.

Thanks Joann! Made baby back pork ribs in the crock pot, then was gone ALL day.....so the rolls and a salad made it a meal. :0)
