If you enjoy blueberries, you might just like this.

This was served at our potluck luncheon, yesterday, and the gals all wanted the recipe.

Being as I am the person in charge of corresponding with everyone, I just sent out the recipe.

So while I was at it, I might as well share here.

It was so yummy!

Frozen blueberry salad

1 (14-oz) can sweetened condensed milk

1 (20-oz) can crushed pineapple, drained

1 c. chopped pecans

1 (8 oz) Cool Whip

1 can blueberry pie filling

Combine condensed milk and pineapple. Stir in pecans and pie

filling.

Fold in whipped topping. Pour into 9x13-inch dish. Freeze.

Can also use peach or cherry pie filling

I have made this before as well as other flavors. As a matter of fact I made blueberry and strawberry and took to Alyssa's first birthday meal at the church. We called it the pink stuff and the blue stuff. She celebrated with a little boy that is 4 days older than she is.

Thanks, it's a worthwhile reminder, I'll follow up on that too. We like Mediterranean and Middle Eastern food, what's not to like? Lots of fresh veggies and legumes, seafood and fish, and minimal red meat. Flavorful ingredients and spices and no end to the variety.

I love blueberry salad. I make this very often. Although, the recipe I use doesn't call for condensed milk and Cool Whip. But it has a topping of cream cheese, sugar and sour cream mixture.

Oh my, now I want some. I'm going to make this soon.

My Mom used to serve blueberries over biscuit dough with a warm sauce made of lemon juice, ugar, cornstarch and a bit of vanilla extract.

I'm definitely making this. We still have some of the ones similar to this I made with the marachino cherries/pecans in them. I made them in cupcake liners, froze and put in a freezer bag. I'll do the same with this recipe. It's just the right size for a dessert.

Sounds good, never had it but I sure can see it made with a graham cracker crust for a dessert.
