Roll-ups on tortillas are good, and relatively easy. but they aren't finger sandwiches! If you have two types of spirals - one with meat and one vegetarian, that can take care of half your "sandwich quota". For the veggie one, either use the pineapple-cream cheese-nut recipe, or do a cream cheese-spinach-green onion-drained fresh tomato-blanched asparagus filling. I like the rolls cut on a bias for pretty presentation.

Being married to a Brit, I can tell you his favorite finger sandwiches. The first is white bread (not squishy Wonder type bread) with cream cheese or butter, layered with radishes and watercress. Second is a light rye bread with cream cheese mixed with chopped olives and nuts (I use pecans). All crusts are removed after making the sandwich, and then they are cut into quarters, triangles, or fingers.

Sometimes the cut sides are spread with butter, and the edges are dipped in finely chopped parsley, watercress, or finely chopped nuts. This adds to the flavor and keeps the edges from drying out.

Another the DH has come to appreciate is a light layer of pimiento cheese on both slices of the bread with a thin layer of either radishes or deli-sliced ham or turkey, but, LOL, not both at the same time.

I've seen some pineapple-cream cheese-nut concoctions that look good, but I can't really judge, because I just don't like sweet sandwiches.

I'd skip the tuna salad, only because people are reluctant to have "tuna breath" at a party. If you do egg salad or chicken salad, make sure it's not too "gloopy", and spread the bread with a very thin layer of softened butter (preferred) or mayo. This keeps the filling from soaking into the bread and making a soggy sandwich, or worse, oozing out upon sitting for a while. Oh, and either the egg salad or the chicken salad (not both at one party) would benefit from a couple of dashes of curry powder.

With a British husband working for a French company in Texas, I have put on my fair share of receptions for new hires from both the US and foreign countries. We always did an afternoon tea with sandwiches and (ooh-very posh) three kinds of cake. It was always very well received.

Spread your favorite bread with cream cheese. Cut pimento stuffed olives in half lengthwise. Cover the top of the cream cheese with alternating rows of pecan halves and cut olives. Serve open face if you like.

Put peanut butter or cream cheese on banana bread--or any quick bread you like.

Kathleen, pimento cheese finger sandwiches are favorites here.

Use two slices white bread, one brown bread.
Spread pimento cheese on one white, top with brown bread, spread on brown bread, top with white bread.

Trim the crust and cut into three ribbon finger sandwiches.

I have a dumb question, Glenda, where do I find it in the grocery store? Is it jarred or in the refrigerated cheese section? I've never seen it before, but it sounds good.

How about some cucumber sandwiches? Here's a recipe... you can use anything to flavor your cream cheese (ranch dressing mix, or even buy the flavored cream cheese). The dill weed on top really livens it up.

I forgot to add, you could also do a bruschetta or a caprese salad type thing on french bread. I've had some cold ones that turned out really good. Even people who don't normally like tomaotes will often eat a good bruschetta.

People rave about these really simple finger sandwiches. I just grate baby carrots and mix them into cream cheese. Then I spread it between slices good quality country or buttermilk white or multigrain buttered bread. Cut the crusts off after making the sandwiches,it's easier. Then cut into triangles,squares or strips. Always use real unsalted butter and real cream cheese. It makes all the difference.

I like using nuttier (multigrain) breads for cucumber sandwiches. Butter only with cucumber sliced paper thin and watercress or dill.

I have always made my own.

You can find pimento cheese around the dairy products, but you want GOOD PIMENTO CHEESE. Some of it has way too much mayo.

If you have a Fresh Market, Whole Foods, even Publix, ask where their pimento cheese spread and buy THEIRS. IT IS NOT IN A JAR, but in a plastic container.

Wonderful on crackers as well. I grew up on pimento cheese and soda crackers. Mother always made hers as well.

Here's the basic pimento cheese spread (you can even buy the pregrated finely chopped cheese) Not the one I use but more like my mothers.

PIMENTO CHEESE SPREAD

1 lb. mild Cheddar cheese
1 sm. jar of pimentos, drained
1 c. mayonnaise

Shred cheese in food processor WITH the pimento. Mix cheese, pimento and mayonnaise in large bowl. Mix well. Great as a sandwich spread or for crackers
Refrigerate and, take out for 10-15 minutes so it can lose some of its chill to make it easy to spread.

Also great for stuffing celery :o) Another Southern thing!

I must not be a finger sandwich type of person....there's not one mentioned here that I would eat except the PB on Banana Bread...LOL! I don't eat Mayo or Miracle Whip or onions...Surely there are other people like me so I would make at least one sorta plain....for us PITA'S!

How about datenut bread sandwich spread with cream cheese? Yum

My favorite finger sandwich:

Vegetable Party Sandwiches

1 medium onion
1 cucumber
1 firm tomato
1 carrot
1 green pepper

Peel and clean the veggies and run through a food chopper.

1 envelope Knox gelatin dissolved with 2 Tbs hot water.
Mix with veggies and one pint mayo or salad dressing.*
*Depending on how juicy veggies are, may use less.
Season to taste and chill until congealed.

Use various breads and cut into squares, circles, triangles, rectangles.

Hint: Make the sandwiches and then trim off the crusts. Makes a neater, filled to the edge sandwich.

I second Glenda's Pimento Cheese. My DM used to make it, and it was soo good! Also we used to be able to get Krafts Pimento cheese in little glass jars; also Cream cheese with olives. They came in little juice glasses, way back then.
Also the Datenut bread with cream cheese is really good, and easy. Gotta love these Southern goodies!

There IS a big difference in Krafts Pimento cheese in little glass jars. Not the same as pimento cheese spread in the plastic containers. BIG DIFFERENCE!

Everyone I know loves nutty tuna sandwiches. You drain tuna and add mayo, softened cream cheese, chopped pecans, drained black olives and a little lemon juice. It's very tasty! :)

You can liven some chicken salad up by adding a combination of apples/raisins/walnuts or almonds or drained crushed pineapple and walnuts. Go light on the mayo and make sure the fruit is drained well.

A couple of tea sandwiches we made for a bridal tea were;

Cucumber Tea Sandwiches-open faced
8 slices white bread-centered cut out with bisquit cutter
1 English cuke
1 package cream cheese, softened
1 tsp garlic salt
chopped dill weed
chopped chives
sliced black olives

Mix well in a bowl cream cheese, garlic salt, dill, and chives. Cover and chill in fridge. Slice the cuke with a mandolin to get thin slices.
Spread the cut bread with the cream cheese mixture. Top with slices of cukes. Top with a slice black olive.

Salmon Tea Sandwiches-opened faced
pumpernickel bread-crusts removed, cut into triangles
1/2 lb smoked salmon-thinly sliced
1 package cream cheese-softened
finely chopped parsley
finely chopped watercress
2 TBSP lemon juice
pinch of cayenne pepper
dill sprigs for garnish

Mix cream cheese, parsley, watercress, lemon juice, and cayenne pepper in a bowl, chill.
Spread cc mixture on bread triangles. Top with slices of salmon. Garnish top with dill sprigs.

We also made closed chicken salad tea sandwiches which consisted of chopped cooked chicken breasts, celery and seedless green grapes. This was mixed into a curry dijon mayo. Served on rye bread topped with a small lettuce leaf and then the chicken salad.

Thanks for all the suggestions. I'm going to Lexington tomorrow morning and pick up all the stuff. There's Whole Foods store there and will check out the "good" pimento cheese. I might be able to find chutney and dill weed there. I think I'm going to do the pimento cheese, cucumber sandwiches and the chutney & cheese ones. I also want to run by the party store there and get a disposable platter or two.

Didn't go to Lexington afterall. Too lazy, decided to see what I could find in town. Went to Krogers and found the pimento cheese, got all the other ingredients except the chutney. I found a long, small in diameter roll of French bread that is going to be perfect for the cucumber sandwiches.

Don't know about Kroger brand pimento cheese! Check it out to see if it is runny. If it is you might want to add some more grated cheese to it.

Glenda, it's not runny, kinda chunky.

If it's too chunky to spread, put it in a bowl and mash it a little. You want it spreadable.

Sorry to be so late, but one of the best little finger sandwiches I've had was made with hummus and sundried tomatoes on a soft brown bread. Oh, man, was it good!
