Do you make your own jerky?

Chloe has recently started to *love* beef jerky, but the price is high and I don't like all the additives. I've been looking online, and it seems like a relatively simple process. Cut the meat, marinate the meat, dry the meat.

Have any of you done this? Do you dry it in the oven, in a dehydrator, on drying racks with a fan, or ??? I think I'm going to try it in the oven to start, though several sites claim that the oven takes away flavor. Mine goes down to 170°, so I hope that will work.
