Salad or veggie for pot luck

I am searching for a salad or veggie recipe for a pot luck dinner I am hosting this week. Our entrees are pierogis and swedish meatballs. Two people are bringing pasta salad, one of which has chicken in it. ONe person is bringing fruit salad and two desserts. Any suggestions. I was thinking of that cabbage salad with ramen noodles and sesame seeds.

The cabbage salad with R noodles sounds good. We are having our monthly APT house pot luck today, and I made devil eggs and a black bean/corn/tomato salad. When I decided what to make, it was 90 outside, today it is in the 60's. Oh well!
Good luck with your pot luck,Fran. Mostly it is just getting together that is the star of the day.

Grape salad is very good.

Best Grape Salad SERVES about 7

2 LB red seedless
4 ounces sour cream
4 ounces cream cheese, softened
1/4 Cup granulated sugar
1/2 teaspoon vanilla extract, to taste

Topping Ingredients
1/2 cup brown sugar, packed, to taste
1/2 cup crushed pecans, to taste

1. Wash and stem grapes. Cut in half
2. Set aside.
3. Mix sour cream, cream cheese, white sugar and vanilla by hand until blended.
4. Stir grapes into mixture, and pour in large serving bowl.
5. For topping: Combine brown sugar, and crushed pecans.
6. Sprinkle over top of grapes to cover completely.
7. Chill overnight

I am getting things potted up for the swap. I am focusing on bringing a smaller number of larger trades this year. I stopped by a nursery to find some cheap pots and talked them into selling me some of their 6" square pots (probably about 1/2 gallon ones) for $.20 each. Last year Oakland Park had nice 4" ones for $.09 each, but they didn't carry them this year. So far I have rhubarb, chocolate mint, lemon balm, spiderwort, lamb's ear, evening primrose, Golden Tiara hosta, misc. var. hosta, and Michaelinsis daisy potted up into 1/2 gallon or larger pots. I also have quite a few small starts of Penny's Worth daylily, a nice little daylily with yellow flowers. It kind of looks like a miniature version of Happy Returns. I also have plenty of tomatoes. I have about 60 varieties started this year. Some I only have a few of, but many of them I will have extras of to bring to the swap. We will be potting up some other things to bring as well. We usually bring the dogs into Columbus with us when we visit. But I don't see how they will fit in the van with all of the plants. It looks like we will have to leave them with friends for the weekend. We are looking forward to seeing everyone on the 15th. James

Here are directions to Mill Race Park.... Take I-65 South to Exit 76A (Columbus/Taylorsville - US 31 South Exit), merge onto 31 South, get and stay in right hand lane. You'll go through 3 stop lights Light #1 Big Foot gas station on right side of road. Light #2 Silgas propane business bldg on left side of road, large propane tank out front, with SILGAS in big letters. (You'll drive a little distance between each of these lights). As soon as you go through light #3, you'll veer to the right onto exit IN-11 South (I think there's a sign above the stop light or just past the stop light that says Downtown Columbus). Follow IN-11 South to the first stop light, turn right at light (Lindsey Street) get in the right hand lane, park is on right, watch for Mill Race Park entrance on right (it's before the next light). I'll have a sign or balloons or something, to mark the entrance to the park, and leading to where we are in the park. (I won't know where we'll set up, until the day of the swap). If by some chance you miss the IN-11 South exit, (that means you went straight instead of veering to the right onto 11), go to the next stop light (Washington Street) turn right onto Washington Street, take Washington Street to 5th Street, turn right onto 5th Street, take 5th Street as far as you can (2 blocks I think) and you'll be right across from the park entrance. If all else fails, stop anywhere and ask how to get to Mill Race Park. I'm horrible at giving directions, so if they don't make sense let me know, I'll get someone to 'splain them better. I belonged to a pot luck monthly dinner club for about 12 years. There were 5 couples and we alternated so you had a month when you were host and 4 months off. The host provided the meat course and all drinks, alcoholic and otherwise, and the guests brought vegetables, salad, hors d'ouvres and dessert. And that also alternated. It was very interesting because one gal didn't cook....at all! But was willing to learn....sow e had a few interesting things in the first few years...until she learned to read a recipe! LOL! When wew ent to their house, they almost always served steaks that he grilled ( and very well too I might add!) and hordouvres were things like a big bowl of shrimp, or a side of smoked salmon, sometimes some nice cheeses and deli spreads....but the vegetables and salads were the adventure! Over the years we all learned some things. One gal never made desserts and had no idea how to make a pie or cake, but she learned that brownies and icecream were good as were fruits and bought pound cake. I am bad at veggies to take, I don't make veggie casseroles, but learned to take fresh veggies to be quickly steamed on site or a dish of veggies to be roasted. But I have never liked no list potlucks. Years ago I hosted a lot of cast parties for the community theater. Very often there were 75 to 80 and once I counted 120 people....sitting on the stairs and standing anywhere they could find a square foot to stand in! It was the custom for the host to order food and soft drinks and to tell everyone how much their share was and then everyone would bring something to share. The usual "cost" was about $5 per person...that covered drinks meat and buns for sandwiches. So I decided I could do better.....and made a gazillion buns with one other person's help and bought a ham and had it shaved and bought a big beef roast, cooked it and had it shaved and bought and roasted a turkey and had my DH carve it. And used my own plates and silverware. Costs for that amounted to about $1.50 per person. I counted on others to bring potato salad, and brownies and such....and got bags and bags of chips and commercial dip... So the next time I made coleslaw.... and provided a sign up sheet for chips and dips, raw veggies, desserts and specified cookies or bars, potato salad and posted a category for "miscellaneous"....and some idiot brought a frozen pizza that had to be cooked, watched so it didn't burn and cut and served....and it only served 8! I hate to be surprised when I am hosting a huge party. Linda C

I recommend this one. Copied and pasted from a previous post. It was a success at the party and very pretty: Deborah_ps's recipe as posted: Paella Salad 1 cup good olive oil 2 cups long grain rice 5 cups chicken stock 2 generous pinches saffron 1-1/2 teaspoons salt 1/3 cup red wine vinegar 1-1/2 pounds medium sized shrimp, cooked, peeled (Costco) 1/2 cup julienne slivers red pepper 1/2 cup julienne slivers green pepper 1 cup green peas (I use uncooked frozen) 1/2 cup halved black olives (a mix of Greek olives are good) 1/4 cup chopped parsley 1/4 cup chopped chives or green onion 1. In large heavy bottomed pot with lid, heat 1/4 cup of the oil over medium high heat. When oil is hot add the rice and cook, stirring until it is opaque, 2-3 minutes. Add the stock, saffron, and 1/2 tsp. of the salt. Stir well to dissolve saffron and bring to a simmer. Lower the heat and cook, covered, until all liquid has been absorbed, about 20 minutes. (Try not to over cook.) When rice is cooked, remove and turn out into a large shallow bowl or pan and let cool to room temperature. 2. To assemble the salad, place the vinegar and the remaining 1 teaspoon salt in a large mixing bowl. Whisk in the remaining 3/4 cup olive oil. Add the shrimp, red and green peppers, peas and olives. Let marinate 10 minutes. Then add the rice, parsley and chives. Mix well. 3. Serve at room temperature or slightly chilled. Since I've rarely met a recipe I didn't tweak I will confess to adding 2 cloves fresh minced garlic to the cooking rice. I also used red, yellow, orange, and green bell peppers since Trader Joe had all 4 colors. They were very pretty with the saffron colored rice (I used Basmati). I used Kalamata olives which gave it a bit of flavor punch and whisked some fresh ground pepper into the red wine/olive oil mix. I used Costco frozen peeled large shrimp. A note: I didn't read the bag, you aren't supposed to quick thaw under running water so remember to let them thaw overnight in the frig. They get soggy, ask me how I know...

This is a tried and true recipe that I have taken to potluck. Everyone loves it!

Curried couscous salad

1 1/3 cups couscous cooked in two cups of orange juice
Heat in micro: 2/3rd cups dried cranberries, 1/2 cup chopped apricots in one cup of water to plump up
Finely chop 2-3 scallions with green
toast 2/3 cup chopped walnuts
Toss with 1 Tbl curry powder, freshly ground pepper and salt to taste.
Add at least 2 Tbl olive oil to keep from lumping.
And 1/4 cup more of orange juice before serving if too dry

Recommendation on the grape salad

Sprinkle mixture completely over top of grapes and give it a GENTLE PAT
Cover overnight, with seran wrap

That's a lot of Salads.

What about some bread of some kind? Garlic bread or rolls.

You could also do baked potatoes and just wrap them in foil to keep them warm. They would go well with the meatballs.

You can make as little or as much as you want of this casserole just by using fewer boxes of spinach and less mushrooms. It is always a great hit when I bring it to pot lucks. It can also be made a couple of days ahead and then baked when you need it.

Nita's Spinach Casserole
This will feed a crowd or at least the ones I have taken it to. There won't be any leftovers.

10 boxes of frozen chopped spinach, thawed and the water squeezed out of it.
3 sticks of butter or margarine
fresh mushrooms, sliced and cut in thirds I use probably 1- 1.5 pounds (or as many as you want to use)

I take half the butter and melt it in a large frying pan. Then take half the spinach and half the mushrooms and add to the pan. Sprinkle some salt and pepper in and then stir it around to mix thoroughly until heated through.

Butter a 9 x 13 pan and then layer about 1/3 of the mixture. Now sprinkle over all with canned Parmesan cheese (don't skimp). Continue with the layers until gone and end with cheese. Bake in a 350 degree oven for about half an hour

You have meats and starches and fruit so I would lean toward a green veggie to round out the meal... Your cabbage salad sounds good, or a spinach casserole like Nita posted. Aside from maybe a bread, I would not add another starch.

I love the spinach one but it is not for everyone. Did not go over big when I took it to a potluck. A few LOVED it and others would not even try it LOL. I could eat the whole thing I love it that much.

Thanks for all your suggestions. I really feel I need to add something besides a carb to this meal. That grape salad sounds fabulous. Must try it another time.

The Asian slaw sounds good to me or just a basic coleslaw too. A regular green salad seems to be a bit clumsy at potlucks I've attended. How about a strawberry salad? Surprisingly light and refreshing and you wouldn't think strawberries and onions would go together but they do.

Or the Tequilaberry's Salad is popular and easy too.
