Sorry I didn't do this yesterday........out of town at a funeral, so I'll make up for it by posting 2 recipes.

French-Fried Cauliflower

1 small head cauliflower

1 teaspoon salt

1 egg

1/2 cup milk

1 cup biscuit baking mix

Wash and break cauliflower into small florets. Sprinkle on the salt.

In a separate bowl, combine milk, egg and baking mix and stir well. Dip

florets into batter and deep fry until golden brown, 8 to 10 minutes,

turning frequently. Drain on paper towels.

Asian Tilapia in Foil

4 servings

4 (6 ounce) tilapia fillets

1/4 cup low sodium soya sauce

2 tablespoons toasted sesame oil

1 tablespoon minced fresh gingerroot

1 bunch green onions, chopped

1/4 teaspoon pepper

1. Preheat oven to 425* F. Wash fillets and pat dry. Tuck thin ends under so the whole fillets will be of equal thickness.

  1. Place each fillet on 12x15" pieces of foil.
  2. Combine soy sauce, sesame oil, ginger, and pepper and spoon over fillets. Sprinkle scallions on top of each fillet. Fold the foil over fish and crimp edges to seal.
  3. Place packets on baking sheet in a single layer.
  4. Bake at 425* F for 10 to 12 minutes, until foil is puffed and fish flakes easily when tested with a fork.
