One for fried. That's enough.

Luckily, we both like zucchini all sorts of ways and been having some nearly every day. Raw, grilled, cut into ribbons, stuffed, sauteed, added to salads and casseroles, fried patties....you name it. I don't typically make sweet things, but I think I will this week to send with Robert to work for his staff.

I didn't plant any zucchini, but I have plenty of cucumbers. Made some pickles and some relish for me and some pickles for my daughters family. The ones that are too big for pickles I put on a small table near the road with a free sign and they disappear.

This zucchini cake recipe is absolutely delicious! I have had it for so long that I do not remember where it came from. It is moist and tastes similar to carrot cake, and you can use young or big old tough zucchini. I am baking it today to take to my brother's BBQ tomorrow, so I thought I would share the recipe.

ZUCCHINI CAKE

2 c sugar
1 c cooking oil
3 eggs
2 c flour
1 tsp baking soda
1 tsp salt
1 Tbsp ground cinnamon
2 c shredded, unpeeled zucchini, packed (about 3 smaller ones)
1 c very finely chopped walnuts (best to chop in the food processor)
1 Tbsp vanilla
Cream Cheese Frosting

Scrub zucchini skin well to remove all grit before shredding it--use a vegetable brush if you have one.

Mix sugar, oil and eggs on medium speed of mixer for 4 minutes. Fold shredded zucchini, nuts and vanilla into sugar mixture. Sift dry ingredients and fold into batter. Bake in a greased tube pan at 350 degrees for 60 to 65 minutes. Cool in pan on cooling rack 20 minutes and turn out on rack to finish cooling.

Cream Cheese Frosting

3 c powdered sugar, sifted
2 (3 oz) packages of cream cheese, softened to room temperature
5 Tbsp butter, softened
1 tsp lemon extract.

Beat thoroughly and frost your cake.

My husbands new favorite is
Zucchini and potato bake. I found the recipe on allrecipes web site.

2 medium zucchini, quartered and cut into
large pieces
4 medium/ large red potatoes cut into
large chunks
1 medium red bell pepper, seeded and
chopped
1 clove garlic, sliced
1/2 cup dry bread crumbs
1/4 cup olive oil
paprika to taste
salt to taste
ground black pepper to taste
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
3. Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

I add a a big chopped small - med onion

( and use Salad Supreme seasoning in place of the Parmesan cheese )

This is one of my zucchini cake recipes that I like. It uses 3 cups of zucchini and makes a nice big cake.

Zucchini Cake
4 eggs
3 cups granulated sugar*
1 1/2 cups vegetable oil
3 cups grated zucchini
3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1 cup chopped walnuts
2 teaspoons vanilla extract
Mix together eggs, sugar and oil. Add zucchini and remaining dry ingredients, stir well. Add nuts and vanilla last and mix. Pour into a greased and floured tube or Bundt cake pan. Or bake in a large baking pan, a deep one, 9 x 13. May need to adjust the baking time. Bake at 350 degrees for 60 minutes. Frost with cream cheese icing.
*For spice cake variation, substitute 1 1/2 cups firmly packed brown sugar and 1 1/2 cups white sugar and add 1 tablespoon cinnamon and 1 tablespoon vanilla extract.
Cream Cheese Icing
1 (8 ounce) package cream cheese
1/2 cup butter or margarine
1 teaspoon vanilla extract
1 cup confectioners sugar
Cream cream cheese and butter with a fork and add vanilla, then sugar and beat until smooth. Spread over cooled cake.

Mine are doing nothing. I have not gotten a single zucchini or squash and very few maters. Our garden is really bad this year. Guess all the early rain put a hurt on it

I love the really big ones. My neighbor used to bring them to me because he didn't know what to do with them. I slice them in thick round slices, in a bowl I put olive oil, seasonings like garlic salt, fresh ground black pepper, Tony's, dry herbs. I put each slice through that, then I lay them on my broiler pan that has been sprayed with olive oil or Pam. Next sprinkle with grated parmasean cheese, and on top put a slice of fresh garden tomato, and put a slice of mozzarella or similar cheese, drizzle with a little bit of the olive oil mix put them in the oven at about 375 for 20 minutes or so, the cheese should be nicely golden brown and bubbly.
They are wonderful, and even better if done on the grill.

After I made it for the neighbor I didn't get as much giant zucchini he had a new recipe. I would add various things to it like some bacon or thin ham a thin slice of sweet onion. Just depends on what I have.
