Beet or carrot 'bread'

We had a great year for zucchini and summer squash of all kinds and we are squashed out. I have made z. bread and grated zs and ss into portion sized bags for soup and bread this winter. The ones that get away and turn into canoe paddles get chopped up and fed to the chickens and sheep. So now, I had a great year for beets and carrots. Yes, I have a "to die for" carrot cake recipe that I will make when it cools off. BUT, does anyone have a recipe for something along the lines of zucchini bread using carrots or beets. (we have to warn people who eat fresh beets to not be alarmed the next morning when they take their daily constitution!) The carrot cake recipe is very heavy with pineapple & yellow raisins and nuts and wonder if it would work as a bread. Any hints or suggestions? TIA
