I ignored the heat and baked yesterday

I used recipes I've gotten from fellow KTers. The first one I've made before and still recommend it. It comes from Glenda_Al:

Irish Brown Bread

If you can't get to Ireland to savor their wonderful Brown Bread, this is the best recipe using American whole wheat flour:

1 ¾ cups all purpose flour

1 ¾ cups whole wheat flour

3 tablespoons toasted wheat bran

3 tablespoons toasted wheat germ

2 tablespoons old-fashioned oats

2 tablespoons packed dark brown sugar

1 teaspoon baking soda

½ teaspoon salt

2 tablespoons (¼ stick) chilled unsalted butter, cut into pieces

2 cups buttermilk

Preheat oven to 425 degrees F. Butter a 9x5x3-inch loaf pan. Combine first 8 ingredients in large bowl; mix well. Add butter; rub in with fingertips until mixture resembles fine meal. Stir in enough buttermilk to form soft dough. Transfer dough to prepared loaf pan.

Bake until bread is dark brown and tester inserted into center comes out clean, about 40 minutes. Turn bread out of pan and cool right side up on rack.

Second is from Marilyn_Sue... They're VERY moist and tender.

Peach Oatmeal Muffins From Home Cooking 1979

1 can (16 oz.) cling peach slices

2 cups whole wheat flour

¾ cup sugar

3 tsp. baking powder

1 tsp. salt

½ tsp. baking soda

½ tsp. cinnamon

¼ tsp. nutmeg

1 cup quick cooking rolled oats

2 eggs, well beaten,

1 cup milk

¼ cup cooking oil

Drain peaches, cut into small pieces and set aside. In mixing bowl, stir together flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg. Add oats and peaches. Stir to coat peaches. Combine eggs, milk, and oil. Add to flour mixture, stirring just until dry ingredients are moistened. Fill greased muffin tins about three- fourths full with batter.

Bake in 350 degree oven, 35 minutes until done. Cool in pan for 5 minutes. Remove to wire rack or serve immediately. Can be frozen and reheated to be served at a later time.

Oatmeal fruit muffins can be made ahead and frozen. Take them out of the freezer the night before, and warm briefly before serving.

Thanks to both of you for adding to my eating pleasure AND my girth.
