Hi LuckyGardnr! Glad to see you! Don't worry, we'll be here to start the daily thread. Here are a couple of recipes for pre-cooking chicken to have on hand anytime you want a quick meal. I've never done it, have any of you? It makes sense, to me. One is to slow-cook chicken thighs, and use in shredded meals like barbecued chicken on a bun, quesadilles, etc. The other is to poach chicken breasts and you can shred, slice or chunk the chicken to use in future recipes. SHREDDED CHICKEN MASTER RECIPE Place 4-1/2 to 5 pounds chicken thighs, skinned, in a 4- to 5-quart slow cooker. For bouquet garni, cut an 8-inch square from a double thickness of cheesecloth. Place 4 thyme sprigs, 4 parsley stems, 2 bay leaves, 2 cloves garlic, halved and 1/2 teaspoon whole black peppercorns in the center of the cheesecloth. Bring up corners of the cheesecloth and tie with string. Add bouquet garni to slow cooker. Pour 1, 32-ounce box chicken broth over all. Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours. Remove bouquet garni and discard. Using a slotted spoon, transfer chicken to a large bowl. When chicken is cool enough to handle, remove meat from bones. Using two forks, shred meat. Add enough of the cooking juices to moisten meat. Strain and reserve cooking juices to use for chicken stock. Place 2-cup portions of chicken and chicken stock in separate airtight containers and refrigerate for up to 3 days or freeze for up to 3 months. Makes 6 cups. Ready for Anything Poached Chicken Liquid ingredients: Water works well, but fruit juices, clear soup, white wine or canned tomatoes add flavour during the cooking process. Or try chicken broth or orange, pineapple or apple juices. If you need a sauce, mix 1-4 tsp cornstarch with 1/4 cup water and at the end of the poaching process. Herbs and Spices: Use a combination of the following: lemon pepper, poultry seasoning, paprika, chili, ground coriander, thyme, basil, rosemary, tarragon, parsley, garlic or fresh grated ginger. Method: Sprinkle the chicken with seasonings. Heat a non-stick skillet over high heat and spray with cooking spray. Add chicken and brown 3-5 minutes per side. Add enough liquid to come *halfway up the sides* of the breasts and cover. Lower heat to medium-low and simmer for approximately 7 minutes for 2 breasts. Increase cooking time for larger quantities. Turn at least once. Quickly add the thickening agent, and whisk and cook until liquid thickens. The flavours in this dish are even better when the chicken is left in the liquid overnite in the frig. Serve with rice, potatoes or pasta.

Sauteed Swiss Chard Ingredients: 2 tablespoons butter 2 tablespoons olive oil 1 tablespoon minced garlic 1/2 small red onion, diced 1 bunch Swiss chard, stems and center ribs cut out and chopped together, leaves coarsely chopped separately 1/2 cup dry white wine 1 tablespoon fresh lemon juice, or to taste 2 tablespoons freshly grated Parmesan cheese salt to taste (optional) Directions: 1. Melt butter and olive oil together in a large skillet over medium-high heat. Stir in the garlic and onion, and cook for 30 seconds until fragrant. Add the chard stems and the white wine. Simmer until the stems begin to soften, about 5 minutes. Stir in the chard leaves, and cook until wilted. Finally, stir in lemon juice and Parmesan cheese; season to taste with salt if needed. Sue

Well. I didn't get a wine Safari! But a year and a month (or two) AFTER my 60th, DH and I finally went to Lake Geneva, just as I hoped for last year. We went to a different part of the lake than the tourist town, but had a nice sandwich (seriously, hands-down THE best chicken wrap I ever had, FRESH-cooked chicken, I watched him slice it, at this little hole-in-the-wall spot) walked a bit of the lake path, some fabulous ice cream, then drove around the lake. It was so nice, though I didn't get my shandy on a patio. So, since it's only an hour or so away, I went a few weeks later with a girlfriend! We had lunch and a shandy overlooking the lake, shopped, and just had fun. Happy Birthdays to all!

There are some great books out there that help you think about space well. Alexa Hampton has one on how to decorate, called Decorating in Detail, for example. Her style is not mine, but I like the way she lays out her thinking. For me, I look at a room and think about what the essential elements it requires are. A living room needs a wonderful rug and a great sofa and curtains first. I would spend a lot of time playing with those elements. Choosing the rug and the curtains first and then the fabric for the sofa last. I like very traditional Persian rugs paired with white Damask sofas with raw silk curtains. After that I would move on to the next room, trailing along the color scheme with me (not repeating it- but rhyming it perhaps.) The most important elements that impart personality and style to a room are art and accessories. You can't rush those purchases. You will find or make things that are meaningful to you over time.

I don't know but I have met an alot of Boomers who share my December 20th birthday and I often wondered why.
My mom said that the doctors used to induce labor on the 20th so the moms could be home by christmas (back when you could stay 4 days in the hospital)

My SIL has three grandchildren born in November. Their birthdays are Nov, 22, 23 and 25. The 22 and 25 are brother and sister. Each was induced the Monday of Thanksgiving week, each born in different years.

I think its done more so the doctor can be home for the holiday than the mom. My niece that has the child born on the 23 is expecting in October. She said she did not want another child due in November.
