Remember my stoneware loaf pans?

Do you remember when I was looking for some ceramic loaf pans, and I picked up 4 off of Freecycle? They were brand new, still had the stickers on them.

I only use them for baking bread, and they get these little shadowy cracks in the dishes. It doesn't feel cracked, the dishes are perfectly smooth.

Does this mean they aren't really heat-proof, even though on the bottom says they are.

Personally I wouldn't use them now they are cracked. I don't like the idea that "stuff" would leach out from the clay into my food. Cracks form, bacteria gets in. I don't use any dish for food that has a crack in it but that might just be my own issue. LOL

The stoneware may be heat proof but not the glaze. Also, does it stated what is the max temperature? Many are only safe up to 350F degrees.

I just use cast iron loaf pans.

A few hints about pizza stones: Keep a scrubpad for use only with the stone. Clean the baking surface of the stone with it and running water only. Never use any kind of soap. Don't soak the stone. The first few pizzas using the stone will probably have an odd tasting dry crust. To avoid this "bake" the stone a few times on its own. You can season and bake the stone with a very light coating of veg oil to lessen this effect and help start the creation of a nonstick coating. Once pizza production starts the seasoning can usually stop. Pizza stones of the $10 type are usually made from compressed sand and are really rugged. I've placed frozen pizzas onto stones at 430F and haven't lost one yet. The secret seems to be get it down fast, flat, and centered to lessen thermal shock. My recipe for a frozen Kraft Delicio. I like them in a pinch because they don't overdo the sauce and toppings so the bread has a chance to become something other than a soggy mess. Also like to pop off the frozen pepperoni and put it back 5 minutes before the finish : Preheat ordinary oven half hour or so 25 to 30 degrees above directions given on pizza box with stone on next to lowest or lowest rack. When ready, quickly open oven, push the frozen pizza so its "front" edge goes nearly to the back edge of the stone and quickly drop it in place it so it is centered, close oven. When the crust and cheese start to darken put the pepperoni back on top and close oven. I like to have it in a ring on a paper plate and quickly upend it so it all falls in a circle about halfway between the center and crust. Leaving the center bare helps the bread in the center to finish rising. If necessary, I use silicone turners to ensure the pizza isn't stuck to the stone when it's time to remove it. Leftover or even made ahead pizza slices quickly reheated in the microwave produce a soft breadlike crust which some folks prefer to the fresh from the oven crustiness. Your results will be unique to your conditions of course. A pizza stone is a very handy item to have around. Good luck!

I'll add my name to the list of people who hate the silicone bakeware. I had better luck with the muffin pan, which was smaller, than I did with the bundt pan, which always stuck, never stayed in the right shape, spilled when I tried to move it. No matter how much it was greased or floured or sprayed, it stuck and everything came out in many pieces, never all in one piece. I hated that pan, as well as the round layer cake pans which performed approximately as poorly. They were such carp that I put it all in the "free" box when I had a yard sale but no one took it because when they asked how it worked, I told them. I do have Silpats, which I tried to use for rolling out pie crust and it worked horribly for that too, but it's pretty good for fondant if you dust with powdered sugar and they work for baking cookies. Dave does like the silicone pot holders for removing hot radiator caps and such in the garage, so I gave those to him, LOL. It might have worked OK for an ice mold, or maybe jello, but I don't make either of those things, so into the trash went the silicone. My favorite pans are my old uncoated aluminum Bake King pans, probably the things are as old as I am. I have some nice new non-stick KitchenAid loaf pans and they've held up, not lost their coating, work well, don't stick, etc. However, they are 9x5 and they're just too big, so I always revert back to the smaller 8 inch Bake King pans. I have old Bake King round cake pans too, they work well as long as they are well greased and floured. My old glass pyrex also works as well as anything I own, but I don't have any ceramic bakeware other than pie pans. I try to stay away from glass/ceramic bakeware because I'm clumsy and when my carpal tunnel is giving me fits I drop everything. Metal can take the abuse. (grin) Annie

I have many different types of loaf pans and nothing is exclusive to bread except probably the metal ones. If I made meatloaf I would make it in a pyrex type pan. And in the metal category, I have el cheapos that work perfectly fine and pricey gold pans from WS that work about the same. You should be able to get two non stick (preferable for many types of bread) metal pans for under 12 dollars. I see big sets of bakeware for under 15 all the time. Overstock has a nice metal loaf pan for 8.69 and similar items are on Amazon and Wal Mart. TJMaxx has ceramic loaf pans for under ten most of the time and I have bought most of my polish pottery there cheapish, including loaf pans, which are aesthetically pleasing to me. I'm not a thrift store kind of gal (dh is though) as I hate the way those places smell and wading through garbage that is priced like it's gold. I'd rather dig through stuff at Tj.

Hi Sally, Grainlady has generously shared her knowledge with us, and often mentioned loaf pan sizes. On page 3, there's a thread about Homemade vs Storebought bread. This is an exerpt on one of Grainlady's responses: "A mistake often made, and why the dough doesn't seem to raise as high as you'd like, is from using the wrong amount of dough for the pan size. This is also the cause of over- or under-proofing. As an example: if you make a recipe that makes 1-1/2-pounds of dough (about 3-cups of flour in the recipe) and place it in a 9x5" pan (which are generally designed to be used for loaves of quick breads), that's the wrong pan for that amount of dough - a standard-size loaf pan is a better choice - 8-1/2x4-1/2". I don't know that they are cracked though. As I said, the stoneware/ceramic is perfectly sealed. Just these shadows show up, that look like heat fissures.

I know nothing about them but it looks more like stains to me than cracks.

I had that happen to a ceramic pie pan too, and I don't know why. I used normal temperatures to bake the pies, and they came out fine.

Could it be age cracks, crazing ? I find those sometimes in older things, although yours look different--so far. The cracks are inside and surface is still intact.

It is the glaze that is cracked, or crazed. You can't feel it, but it is cracked just the same. I wouldn't use them for cooking. Bacteria gets in and stays. also, could cause and explosion in your oven next time you use them if the filling or liquid soaks down into the clay part and then heats up.

I am a potter and know all about clays cracking in the oven. Happened more than once here.

They were probably those cheap walmart pans you find at the holiday time. I see them every year, look so cute with a pie or cake mix in it and all wrapped up pretty to be a gift. Not really usable though.

Same with some pans you will find dollar stores. They come from china and unless they are well made and the clay and glaze are of the same quality you will get those tiny hairline cracks.

I have some of my pottery that I do use even though it is cracked. I just use them for fruit or something NOT liquid and I do not bake in them.

Usually pottery is dishwasher safe and oven safe if made properly.

Darn.
It's not easy finding ceramic loaf pans. I have 1 metal one that I use for meatloaf, and wanted some stoneware, ceramic, etc for my breads.

Years ago I had dinnerware that was Ironstone. I just loved them, but after a few years, they formed these cracks, that i couldn't feel. The dishes were discontinued, so I couldn't get them any more. I looked it up and it was called crazing. I didn't use them for company any more, just displayed in the hutch. As for you using your pans, Jasdip, I guess I'm sorry I don't have an answer for you. They are pretty pans, I can see why you liked them.

Jasdip, have you tried to look them at TJ Max/Marshalls, Ross and Tuesday Morning? I find decent stoneware from Italy and Le Creuset there. Good quality stoneware loaf pans are plenty there too.

I'm in Canada, Ntt, and we don't have those stores near me.
Prior to being given these from Freecycle, I had looked all over for stoneware pans, to no avail.

Pampered Chef probably has something but I don't like their prices! I'll probably have to stick with metal ones.

Here they are when I first got them and posted them here.

Yep, those look like the cute, cheap ones you get at the holidays. Mostly for decoration. You can find them at Walmart, Hobby Lobby, Michaels.... usually used for decoration, not to bake in.

If you find some other cheap ones, you might have luck by not preheating your oven. My pottery is oven safe IF I put it in when cold, and then heat it up while the oven heats up. If you put them in a preheated oven, that could cause the crazing.... the glaze can't handle fast temp changes.

They are very pretty. Too bad they're not of good quality.

From Canada, can you order from Amazon.com? They have lots of loaf pans to chose from, some are very affordable. I see one from Corningware which is pretty quality and price.

I did a search for pampered chef loaf pans+cheap... got this.

You might check out other places, ebay or this place. The prices are better anyway....

I use Pyrex loaf pans for my quick breads and even to bake bread. I collect vintage Pyrex and have a few of them but always use the same white Pyrex loaf pan.
