It may have LOOKED like mashed potatoes, but trust me, it will still taste like cauliflower. I love cauliflower, so not trying to give it a bum rap, but I just don't want you to delude yourself. Now, maybe you could use half cauliflower and half potatoes and come up with something healthy that you might still like. Add some garlic and parmesan and I think you've got something there.

Also, try grating raw cauliflower and baking it with chicken pieces, cheese, garlic and broccoli florets. Everyone will swear that the cauliflower is rice. That is the only way DH will eat cauliflower.

There's a restaurant here that has mashed cauliflower on the menu. I always order it--it's delicious. But it does taste like cauliflower, so if you don't care for the vegetable, I dno't know....

Even my husband loved it....

It's not that we don't like the taste.....we don't think there's much taste to it (Broccoli and brussels are our favourites).

I like the idea of the parmesan and garlic to give it some kick.

We mash ours sometimes and add in some celery, garlic, cheddar cheese and just a touch of sour cream. I like the crunchiness of the celery but some don't care for it.

I've made 'potato' salad using cauliflower. I think it was a Weight Watcher recipe. It was really good.

It is great like that. The way I cook and mash my cauliflower is I steam cook my cauliflower whole or pull off the flowerettes and steam. I do that so there is not much water in the cauliflower. Then I drain and put in food processor with real butter and evaporated milk. I eye it in to see how much milk I need. Salt and pepper to taste. I make mine the consistency of mash potatoes. Our Ruby Tuesdays use to have this as one of their side dishes. Before that I had never tasted caluliflower fixed that way. I figured I could do that and tried it and we love it.

My friend did the same thing as grandmahony, made a "potato" salad with cauliflower instead of potatoes. She was on the Atkins diet for about two years and lost a lot but gained it all back when she started eating carbs again. I guess you really can't cut ALL carbs out and stay healthy. I should know...I'm a diabetic!

Oh, and the 'potato' salad made of cauliflower....it fooled everybody!

I happen to like the "bland" taste of cauliflower. Like any other veggie, add the seasonings you like to ramp up the flavor to your liking. Personally, my preference is salt, pepper and butter but, try mashing with sour cream and seasonings of choice, put in a buttered baking dish, top with toasted bread crumbs (seasoned or not) and cheese and bake. In other words, the bland taste, like potatoes lends itself to a lot of variations.

DH likes cauliflower "potato" salad better than potato salad.
And I made it for a luncheon and even the guys loved it....they didn't know it was cauliflower until after they had eaten.
Add lots of butter to the mashed cauliflower and it will taste great.

I've made it and thought it was really good. A pat of real butter helps too. I don't think you can taste the cauliflower that much at all.

Call me nuts--I love to put Cauliflower in the micro & smother with butter, S & P---gives me a fake taste of lobster tail!! Guess its the butter--LOL

One of the chain resturants here in town makes Califlower mashed and it has a great taste. I love it with just lots of butter and salt & pepper too.

I never meet a Veggie I didn't like! Can't say the same for "meats". LOL! I don't do Liver or Mutten.

I only like raw cauliflower. Like you I find it a pretty bland veggie. I'm not one to top or add stuff to veggies. Either they stand on their own or they don't. ;-)

I've always liked raw cauliflower and years ago I was served steamed cauliflower as a sub for taters. I was impressed. I too don't find it to have a bunch of flavor, similar to potatoes, which I don't find to have that much flavor.

A few months ago I jotted down an idea I had to substitute some blanched cauliflower for potatoes in potato salad. Thought it might work better for summertime picnics and though it could be interesting to try. Glad to hear others have tried it. Once again, I come up with an "idea" that has already been done. But then again, there's not all that many totally original ideas I guess.
