Mashed cauliflower

My son adores mashed potatoes. So do I. We're looking for a lower carb alternative. At least I am. He's 17 and dances 25 hours a week, so he can and does eat anything.

Here's a mashed cauliflower recipe that is tasty and easy.

- Cut cauliflower head into medium chunks, be as messy as you like, it's all going to get mashed. Into the pot.

- Add not quite enough milk to cover. Or water, or milk & water. Just depends how lavish you are feeling.

- Bring to boil, reduce to simmer, simmer until cauliflower is soft. I do this uncovered, to let liquid evaporate.

- Add 1 cup cheese, melt it in. Any cheese will do. If you're feeling luxurious, make it Brie.

- Transfer cauliflower to food processor. Transfer the milk/water to another container. Process to smooth, adding enough of the milk/water to get the consistency you want.

- Transfer back to pot. Melt in a 1/2 cube of butter and about 1 T olive oil. Add salt to taste. I like a little bit of white pepper or wasabi or horseradish. Add some of the milk/water if consistency requires. For special occasions (Thanksgiving?), a bit of heavy cream wouldn't be too much.

- Variations: add garlic to cook with the cauliflower, or use stock instead of water, or use colored cauliflower.

- This isn't especially low calorie (lower than mashed potatoes, though) or low fat (fat is good!) but is much lower carb than the spud dish. My son gobbled it up.
