I am making beef fajitas with black beans.

Just making bruschetta for the two of us. Maybe a glass of wine too. Ate out for lunch so just need a nosh.

We've had cool weather for the past week and I love it. It's actually below normal. Today it was 68.

I took a baked ziti out of the freezer a couple of days ago. We just had some with garlic bread. When I make it, I make enough for a casserole for the freezer. It's so handy to thaw and we just nuke our portions.

My meal was carb-city: chicken noodles alfredo, mashed potatoes with gravy. I also ate half a salmon patty for extra protein.

I made a large pan of eggplant parmesean. All the eggplant are ready to be used in the garden. Will need to start giving them away. Made a lemon meringue pie.

Sue, nothing better than fresh green beans. We used to plant some called Blue ?? Can't remember but they were nice, firm and very tasty. I've never had luck with biscuits, but I'm ready to try again.

Raven, you're such a good cook. I saw a recipe on Pinterest where you put all the fajita ingredients in a casserole and bake it. It sure looked easy. Then just wrap in tortillas.

Yaya, I like those kind of nights. Ours is usually melty brie with pears and grapes with some kind of white wine.

Jasdip, 68 is our normal daytime winter temperature. Glad you like it though--I freeze! People get out the winter coats. :-) Separating meals for the freezer is the best thing I've learned to do.

Shirley, nothing wrong with a few carbs :-) We always have mashed potatoes with our chicken and noodles. Just wouldn't be right without them. One thing I've learned is oncologists don't care how many calories/carbs you ingest. Just want you to eat what you can.

It'll be turkey burgers, mesclun salad, and sweet corn.

We are in Silver City, NM and this is our last night in the motor home before getting back to Sierra Vista sometime early afternoon tomorrow.

Tonight we are going out for Mexican. I will probably get either fajitas or chili relenos.

Went Mexican, today, as well. Had quesadillas at Superior Grill. Best around.

We went out for dinner tonight. Then end of the month and had to finish up our minimum. DH had beef tenderloin with oysters Rockefeller and I had something called pasta Napoleon. It was very good but very heavy on the garlic. My pores will be oozing garlic for the next week!

Mary, you must be feeling better. Wish I liked eggplant. I'd come pick some--just to help you out, you know!

Nita, even though your RV is huge, that house is going to seem like Buckingham palace. The cats will have to readjust to living on "land" again. Bet Mike is excited to be home again--you?? Harry's favorite is chili relenos. Enjoy your last night.

Glenda, I bought a quesadilla maker, but it was a waste of money. You can hardly put any filling in them without it oozing out the sides. So I'm back to flipping them.

Georgysmom. Well that was well worth saving up for your minimum. I love oysters Rockefeller--especially the ones we got in a little restaurant in Portland, Maine. Don't worry about the garlic--it cures whatever ails you.

Drug out the George Forman Grill because the stove can't be used since the heating element burnt up in the oven. Marinated 2 chunks of salmon and put them on "George" . Had forgotten how quick and simple that grill works. Salmon was very good. Added some Easy Mac and steamed broccoli done in the microwave of course. Tossed a green salad with some grapes and raspberry dressing.
That was it. Hope the new element for the stove comes tomorrow.

Patti, thank you for the 'healthy ' remark. I really work at it but don't think about it too much.....just second nature at this point. We like good, simple food and never feel deprived. And not always so healthy! Lol.

By the way, your beans were Blue Lake.....a very old and very famous variety!
