Help with old time fudge frosting

After seeing how many old timers are here I hope you can help me. My step-Mom used to make a fudge topping for her mayonnaise cake. She died at age 90. I have the ingredients but not the complete instruction. So here goes:

Fudge Frosting (med boil)

2 cups sugar

4 heaping TBSP cocoa

1 cube butter

1 tsp vanilla

Maybe 1/2 cup of milk

Let boil until it makes soft ball, then beat with spoon until it thickens. Don't stir.

Okay since it's like old fashioned fudge, and I'm REALLY good at making that, here goes.

Combine sugar, cocoa and Milk

Bring to boil, reduce heat and SLOWLY let it reach soft ball stage (235-240)...or get a cup of cold (not ice) water, drop a little bit of the mixture in the cup, help it form a ball (if it doesn't it's not ready), if it forms a soft ball that stays in a ball when removed from the water, it's done.

Add butter and vanilla, beat with a spoon until thicken..or looses its gloss

I know it said DON'T STIR (I assume they meant while boiling), but you can stir it without a problem. The big issues is to bring it to the softball stage too fast, if that happens it'll taste grainy.

If it doesn't work, have it as hot fudge over ice cream!!

I use this recipe for fudge frosting. It looks and tastes just like fudge and is really easy. No beating!

FUDGE FROSTING

1-1/2 c. sugar
6 Tbsp. milk
6 Tbsp. butter
1/2 c. chocolate chips
1 c. nuts, chopped (optional)

Bring sugar, butter and milk to a boil and boil 1 minute. Remove from heat, add chocolate chips and stir until chips melt. Add nuts, if using. Spread on WARM cake working fast because it sets up quickly. If that happens, add a little more milk.

I had carried lots of plants inside and into the garage, and covered flowers and vegies. Hubby said in the morning there was frost on some of the low-lying covers, but I could not observe any signs of frost having occurred in the yard. Except the morning glories don't look quite as perky as normal perhaps. But no withered leaves or anything. I am about 8 miles from the lake in northern Racine County, so that probably helped. Have already harvested lots of tomatoes and beans and cucumbers and things, so not many vegies to worry about. Mostly I was covering up various flowers (those darn dahlias are finally blooming) and the tomatillos. I planted things so late I have gladiolas blooming right now. About global warming, have you forgotten last year? The first really hard, killed-everything frost that covering did not impede was Nov. 10th! That is freakishly abnormal and extremely late for my area. I was picking beans on Nov. 4th last year, that is weird. This is WI! Marcia

Chi, No, they are both very similar. Very smooth and creamy. Not at all sugary like some homemade fudge. The condensed milk just replaces the sugar and cream. The texture and flavour are almost identical. I came up with the condensed milk substitute one day when I wanted to make fudge and was out of heavy cream. BUT, my favourite is my White Chocolate and Toasted Walnut. White Chocolate and Toasted Walnut Fudge 1 cup white sugar 1 cup brown sugar 1 cup cream 1/2 cup of butter Pinch of salt 1/4 cup of white Corn Syrup 6 to 8 ounces Callebaut White Chocolate Walnuts 2 teaspoons vanilla Add the two sugars, butter, cream, corn syrup and salt into a sauce Pan. Place over medium heat. Stir while bringing to a boil. Lower the Heat and continue to stir slowly while the mixture cooks. After about 7 minutes, test by pouring a small amount into some cold water. You Want it to form a soft ball. (about 235ÃÂ°F to 238ÃÂ°F on a candy thermometer) When it reaches soft ball stage, remove from the heat, and let rest for about 10 minutes. After 10 minutes, add the vanilla and the white chocolate and stir until the white chocolate melts. You will notice the the fudge starts to thicken almost immediately. Stir another minute or two or until the fudge starts to lose its shine. Quickly add the walnuts and pour into a buttered dish.

Guess I haven't paid enough attention to ingredient lists on the candy I eat. And I'm still alive, too! LilySpider, gluten free products will be labeled as "Gluten Free" or "Certified Gluten Free" with GF in a circle between the wording. IIRC, the former is used when a specific product doesn't contain gluten in its many forms but is made in a factory that also processes products that contain gluten (chance of cross-contamination). That info will usually be included at the end of the ingredient list (chance of cross-contamination). The latter is made without any gluten-containing ingredient and in a factory that does not process products that contain wheat, etc. I can handle minor cases of cross contamination; people with Celiac Disease can not do so without becoming ill. When I started eating a GF diet, I had to learn the secret code to figure out what ingredient might contain gluten. "Food starch" could be corn starch or wheat starch; no way to know so I avoided both. Malt is often used in chocolate; malt contains gluten. Labeling has gotten much better in the few years since I went GF so it's not quite as difficult to tell when an item is a no-no for me. btw, I just read a fascinating article on NPR about the discovery of a protein that affects how we process gluten. Well, much to my surprise, some of the grafts that I put on last year grew fruit spurs, and flowered this spring. Some others grew longer, with no spurs. Maybe those were what the buds were intended for all along, and they just now came out. Anyways, a few flowers on last year's grafts is interesting. This year's grafts have started to really take off. I think I did a much better job of it this year than last. I have a few more scions on the way, so I hope to get those on this weekend, and harvest a few apples in a few years. This winter, I'll try to bring this tree back down to size. BTW - it must've overproduced year before last, then been stunted last year. This year, it is totally covered in flowers. If those turn to apples, I'll have to do a lot of thinning. Well, I had my dear BF help me as he's the candy maker, couldn't keep the thermoter on the pan and tried the glass of water. It looks like we've got some real good fudge topping! I have a beautiful cake and I'm not putting it on until I know it's right. So, I've kicked him out of the kitchen and will try again when I'm not so mad at him and I can figure out the temp. No wonder nobody tried to make this in the family. But I will succeed and thanks so much for the receipe! DF has one more week of vacation, we might be still talking when it's over!

I remember once in college a dorm-mate decided to make fudge. We had a small kitchen with a stove abailable. I have bo idea what recipe she used, but it burned as she was cooking it. And that slightly burnt taste made the absolute best fudge I've ever eaten. Anyone have a good Fudge Recipe? Thank You In advance!

One was to test if it's at soft ball stage is to fill a cup with cool water and drizzle a little of the fudge in it. When you are able form a ball and pick it up, it's done.

Fudge and chocolate cake. Boy did the cup of water bring back memories! My mistake was taking my BF away from a movie to help me and using a 1/2 cup of milk when it said "maybe"? HE USED TO MAKE FUGDGE TOO, YOU KNOW, AND KNEW JUST WHAT SOFT STAGE LOOKED LIKE, DONE IT A HUNDRED

I feel like I'd be cheating but I tried the old way and if there's a newer way........

You have to stir while its boiling or it will scorch the chocolate. When it says don't stir it means after its reached soft ball stage put the butter and vanilla in the pan on top and let it all sit until frosting has cooled to lukewarm. But dont touch it until its lukewarm. Then you mix in the butter and vanilla until frosting is no longer shiny and slightly thickened. Frost cake quickly. Don't make it on a rainy day. Im told it wont do well on rainy days.
