Need Food Ideas

I am going to visit my cousin on Saturday and she has put me in charge of the food. She admits she can't cook and has no idea what to make for us. So, it is up to me. LOL She just deposited lots of money into my account so I better show up with some good food. LOL

On Saturday there will be 4 of us, on Sunday there will be 6 or 7 of us, Monday most of us will be leaving. I would stay for the week but my other cousin doesn't want to drive alone.

The problem is I need some ideas on food that I can make that will travel up to 5 hours in a cooler. I don't want to do much cooking while I am there because I want to visit.

Here are some ideas that I had:

I thought I would make a lasagna and freeze it before we left, I would also make 2 balls of pizza dough for pizza and bring the fixings except the fresh veggies which my cousin has in her garden. My cousin had never had homemade pizza until she had it at my house and said it was the best pizza she ever ate. LOL Then I thought I might make those tortilla spirals with cream cheese mixed with the dry Ranch Dressing mix, chopped red/yellow pepper, choppped green onions, green olives and maybe some ham. I could slice them as needed.

I told my cousin we could barbeque hamburgers or pork one night and if she had the potatoes from her garden and the eggs boiled I would make a potato salad when I got there.

I thought I would make a good chocolate chip cookie recipe with nuts, skor pieces and dried cherries to take but I think I need another dessert. I am also thinking butter tarts.

Any other ideas you have that might be better. Recipes would be great too. I need menu ideas for Saturday dinner, Sunday lunch and dinner, Monday most likely just lunch with possible dinner depending on how late we leave to come home.

Also, since I don't drink wine I need some good wine choices.
