Any good salad ideas for tomorrow?

I've got some for jello type salads...but looking for others. Just some simple ones.

I'm thinking maybe some taco salad...

Am I asking too much to say...not expensive to fix either.

I know my kids will all be bring things...but I'd like to contribute some too.

I love Waldorf salad--chopped apples, celery, pecans, and halved red grapes and rasins. Toss in a dressing of mayonaise, lemon or lime juice and sugar. Be sure to cut the apples last and toss them quickly in the dressing so they won't brown.

Easy*easy*easy! And you'll get lots of compliments! Believe it or not...it's COLE SLAW! And I won't tell my secret to just everyone!!!

1 jar of Marzetti's Cole Slaw REFRIGERATED dressing
2 bags of shredded cole slaw

Add some shredded carrots, chopped celery,celery salt, if desired.

This is soo good!

You're looking for any perennials, or for other self-seeding annuals or weedy/native salad-worthy-type things that you don't have to plant and tend yearly in a vegetable garden, yes? I have a few more suggestions once you wade through the next paragraph. Warnings and cautions: First, I strongly agree with breezyb. Make sure that you know *precisely* what plant species you are dealing with [and not just by common name of the plant], and what part of that plant is 'edible', and at what season, and whether it is ok raw or only if cooked, etc. Second, remember that people can react to new edibles in very different ways. When trying something new, use just a little. Make sure you and family don't have problems. You can expand from there. [As example, I can eat pretty much anything, including lots of wild edible things, but my very first smidge of fresh organically grown cilantro nearly put me in a hospital. You just never know.] Third, remember that many things out there are *edible*, as in not poisonous. But keep in mind the sage wisdom of Crocodile Dundee: "You can live on it, but it tastes like...." Well, never mind. [grin] I agree with lpinkmountain on this one. Strawberry, and raspberry, leaves are edible. And they may have medicinal uses, but 'salad' they are not [wry grin]. You've had many good suggestions. And among the salad greens that Greenwitch mentioned, at least the sorrel [usually sold as 'french sorrel' here] is perennial in our zone, and some mustard greens are perennial or self-seeding here as well. Nasturtiums are annuals in this zone, but are cheap and common in seed packets everywhere, and are easy to grow, and the flowers are very nice in salads. Also check out information on various kinds of "cress" plants, mustard cousins. Some are probably 'weeds' in your yard, and others may do very well here. Purslane!! [Portulaca oleraceae] Excellent as part of a salad! A weed, but I always make sure that there are nice healthy patches in the garden that are not weeded out. Prolific growth. Fleshy leaves, nicely crisp when chilled, and just a bit of spicy/peppery flavor. One of my favorites! Lovage [Levisticum officinale] The leaves have a strongish celery-like flavor. Very fresh and nice. Wood sorrel [Oxalis acetosella] Excellent sharp/acidic flavor. Use in small quantities, as an herb rather than as a salad green.

I have been out of town working all week with no time to respond here. Please understand my sensitivity regarding this matter. I make my living as a creative person, mostly doing visual art but am occasionally called on for my writing skills such as they are. I would be very upset if my efforts - visual or written - were presented as someone else's even if only by omission of attribution. To me it is just wrong. Pleading ignorance doesn't make it okay. Just because it's posted to the internet doesn't make it okay - anymore than taking someone's belongings because they left them unguarded in a car with an open window. Having opportunity does not grant permission. Many years ago I sat in the audience of a local design and advertising awards presentation and watched as my design work - a year's worth of my daily efforts - was presented on screen with no designer/illustrator credits given. I had resigned from my art director position with the design firm a few weeks prior to the show. I left on good terms and had even given a month's notice. I left because I couldn't work a 60 hour week any longer, I was exhausted. My heart broke as I watched my work receive award after award. Even the presenter commented that there were no credits to individuals (like the other entries). My former employer had no idea I was in the audience. She looked rather startled when she ran into me in the lobby after the show. I said nothing. At the same show a photographer had entered one of my pieces (her photo, my design) with no credit to me. Ironic because she had made a big stink about the design firm using her image without credit or royalties. The client had supplied us with a large number of transparencies without informing us that they didn't actually own rights to many of them. Our ignorance didn't make it right. A fee was negotiated and she was given printed credit on the finished piece. Yet she submitted that same printed piece as her own. Go figure. Another time I was asked by a friend and professional colleague to create a poster for an event. It was for the one-time performance of a master's thesis, an interesting adaptation of a Mozart opera. Most of the professional opera singers donated their time, as did the costume designer and others. I created the poster, promotional materials, and tickets. When I opened the program (written by my friend) I read the many credits and my name did not appear! I hadn't given myself a credit on the poster itself, either. I mentioned it to him. He looked horrified, poor fellow. I have a distinctly formed opinion about creative ownership. I can site many examples of my work being imitated, sometimes it's flattering. Both from "Low Country, Up Scale": Gado-Gado (a precursor to a Rijstaffel feast) Ingredients: The vegetables: 2 cups French beans, cut into 1-cm / 1/2-inch lengths 4 medium carrots, peeled and sliced thinly 1 cup cauliflower florets 1/3 cup snow peas Â½ cup broccoli florets For the garnish: Some lettuce leaves and watercress 2-3 whole hard-boiled eggs, quartered 1 medium potato, boiled in its skin, and then peeled and sliced/diced 2 medium ripe tomatoes, quartered Â½ medium cucumber, thinly sliced 1 Tbs crisp-fried onions Par-boil the vegetables separately in slightly salted water, for 3-4 minutes. Drain each vegetable separately in a colander. To serve, arrange the lettuce and watercress around the edge of a serving dish. Then pile the vegetables in the middle of the dish. Arrange the eggs, sliced potatoes, and sliced cucumber on the sides. Heat the peanut sauce (recipe follows) in a small saucepan until hot; add more water if it is too thick. Adjust the seasoning, and pour the sauce over the vegetables. Sprinkle the fried onions on top. Serve warm or cold. Peanut sauce Ingredients: 3 Tbs peanut butter (or homemade peanut paste) 2 Tbs coconut cream 4 Tbs water Any quantity chilies, to taste, chopped finely 2 medium shallots, chopped finely 1 or 2 cloves garlic, minced 1 tsp cumin 1 Tbs peanut oil Directions: Heat the oil in a wok and then add shallots, garlic and chilies, and fry for a couple of minutes until the shallots begin to appear transparent. So-called Chinese Restaurant Syndrome and the accusatory fingers pointed at glutimates as something dangerous were ideas not accepted by everyone and anyway were long ago discredited. I believe this was the source of what you called the "not very good reputation". Or were you thinking of something else? And not a good reputation with "certain physicians"? What does that mean? I don't often eat canned soups or other concoctions but you can be sure most have glutimate-rich ingredients with less potentially misunderstood names than MSG. The Japanese have long been on the forefront of identifying and using glutimate-rich ingredients. Japanese food is very glutimate heavy. That's why so many dishes taste savory and delicious. J Kenji Lopez-Alt is a respected and innovative chef who's very into the science of food and cooking. Formerly with the Cooks Illustrated operation, he's now doing other things (including writing books) and is associated with the website Serious Eats. I recently made his stew recipe and it includes some unusual ingredients as well as what he describes as an "umami bomb" to jolt the flavor. Soy sauce, tomato paste, anchovies, Worchestershire sauce (which has anchovies in it). The end result was delicious. The not so good reputation you refer to is what exactly?

My vote is for GRAPE SALAD

My second, which I love this stuff is cantaloupe salad

CANTALOUPE SALAD with FETA & BASIL
Hands-on time: 10 minutes
Time to table: 10 minutes
Serves 4
1/4 of a ripe well-washed cantaloupe, peeled and cut into bite-size pieces
Fresh basil, cut into thin ribbons
1-1/2 ounces feta, crumbled
1 tablespoon good olive oil
Kosher salt to taste, optional
Combine all ingredients in a bowl and serve immediately.

****I ground some fresh pepper on top when I served it. Not a lot though

I just like basic salad.

Lettuce - Romaine is my favorite.
cheese - I prefer Parmesan, but you can use cheddar or whatever you have on hand.
Craisens
Pecans or Walnuts or sun flower seeds
Chopped apple - can use whatever, but red or yellow is pretty.
cut up lunch meat - I usually use turkey or ham.
Bell pepper - I like to use red, yellow, or orange because they add color.
small tomatoes -optional
chopped cucumbers - I usually cut the seeds out so they aren't so watery.

Have favorite bottles of dressing on side.

This looks good Pattico!

Easy Salad

* 4 slices bacon
* 1 head romaine lettuce, cut into strips (6 cups)
* 1 cup grape tomatoes, halved
* 4 scallions, sliced
* 4 to 6 tablespoons Creamy Parmesan Dressing
* or bottled Caesar dressing
1. In a skillet, cook the bacon over medium heat until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate. Break into pieces when cool.
2. In a large bowl, toss the lettuce, tomatoes, scallions, and bacon with the dressing.
Creamy Parmesan Dressing

* 1/2 cup olive oil
* 1/2 cup grated Parmesan
* 1/4 cup sour cream
* 2 tablespoons white wine vinegar
* kosher salt and black pepper
1. In a small bowl, whisk together the oil, Parmesan, sour cream, vinegar, 2 tablespoons water, and Â¼ teaspoon each salt and pepper.

My vote would be for watermelon salad....so refreshing on a hot day.

1 8 lb. watermelon
1/2 lb. feta cheese, crumbled
1 small vidalia onion
1 c. chopped mint
toasted peanuts
baked prosciutto or bacon slices radishes

Vinaigrette:

1/4 c red wine vinegar
salt and pepper
1/2 C EVOO

I've made this for over 20 years and it's a given that I make it during the summer. This is the recipe, but I don't measure the fruit.I just use however much of each that I want.

Melon Salad

4 cups melon balls--combination of watermelon, cantaloupe and honeydew
zest of 1/2 orange
zest of 1/2 lemon
1/3 cup orange juice
touch of freshly grated pepper
Freshly grated pepper brings out the melon flavour. Combine and sit at room temperature.

My Momma's Macaroni and Tuna salad.... Cheap and tasty

I love this on a hot day for dinner with maybe a grilled slice of ham (with Linda's brown sugar,pineapple juice and honey sauce) and some fruit.

No measurements on this....

Cooked elbow macaroni
Large can of tuna in water drained
1 can of baby peas drained ( I use LeSueur brand)
some chopped celery
a few chopped green onions
mayo
and secret sauce ( a bit of mustard (dry or yellow).....a splash of vinegar, brown sugar (a TBLS or 2) and some mayo to bind).
You can add seasonings to taste. I usually add pepper, a bit of salt and maybe Beau Monde seasoning....but it's really a taste thing. Mix altogether with mayo to moisten

One that we love and I like to make because it is easy, and very hearty is Tuscan Bean Salad.

* 1 can(s) (15- to 15 1/2-ounce) white cannelloni beans, or any white bean..rinsed, drained

* 1/2 cup(s) thinly sliced red onion*, halved

* 1 can(s) (6-ounce) tuna in olive oil, drain; reserve oil...buy a really good tuna

* 1 cup(s) diced plum tomatoes

* 1/2 cup(s) pitted olives

* 2 tablespoon(s) chopped Italian parsley

* 1 tablespoon(s) lemon juice

* 1/2 teaspoon(s) grated lemon zest

* 1/4 teaspoon(s) salt

* 1/4 teaspoon(s) freshly ground black pepper

* 2 cup(s) torn arugula leaves or mixed spring greens

Serve with a good crusty bread or crackers

I'm just goi8ng to buy potato salad and macaroni salad. Had coleslaw this week already, I'm tired of it. My July 4thy menu is Baby Back Ribs (I got on sale $1.99 a pound), salads and strawberry Smores for dessert. (Smores equal sliced Italian bread, Hershey bars and frozen strawberries all done the grill. It's just me and DH, our daughters go to their friends for parties.

Here's "my" taco salad......really...really GOOD!

Bag tortilla chips, crushed
1 head iceberg lettuce, chopped into bite size pieces
1 can chili beans with sauce
1 8oz bottle green goddess dressing(or make your own)
3 roma tomatos, diced
1 4oz can green chilies
1 cup grated cheddar cheese

Mix and serve.

Any good salad ideas for tomorrow?
