5 minute cake in a coffee mug

Saw this at the cooking forums, and found this link.

NOTE: I have not made this.

And I read it has to be cake flour.

Worth trying, just to see if it is good or NOT!

1 box cake mix 1-4 serving size instant pudding Place cake mix and dry pudding in a bowl to mix. When I first posted this recipe, I had no idea I would spend more than 5 minutes considering its possibilities. Can you believe I've spent the past hour playing with variations and options? First, I tried Cloud Swift's version. Frankly, I found it a tad dry. I microwaved it, so as to give the most effective side-by-side comparason (besides, I don't like the bake feature in my toaster oven, a small appliance that may not survive the transfer to the new kitchen). My following experiments were cocoa free attempts for two of my sewing buddies (yes, I sew when I can escape from the kitchen). I'm so glad none of them are gluten intolerant....#1 was a burnt sugar butterscotch type thing. I micro'd 2 tbsp butter with 3 tbsp brown sugar, then mixed in an egg, 3 tbsp milk, 6 tbsp flour, plus vanilla extract. It was OK, but bland. If I had some of those little butterscotch baking chips, or even some chopped walnuts, I'd have added those. Next, and most successful, if I may say so, was the orange poppyseed log. BTW, I cut down on the sugar and fat of these two experiments, as recommended by a few critics. The slightly reduced volume is just enough to keep the mixture from jumping out of my mug during the bake process. Anyway, for this one, I used 5 tbsp flour, 3 tbsp sugar, egg, 3 tbsp milk, 2 tbsp oil, 1 tsp poppyseeds, and a spash of orange extract. Samples of each are sitting on the kitchen counter, awaiting the teenaged son to return from work. For myself, I still prefer chocolate. Also the texture resulting from the egg and milk, ingredients that I always have on hand. Once again, it is a huge mistake to compare these to real baking. If I have to make enough cake for more than myself, I'll use a more conventional method. If I make a more conventional cake for just myself, I'll eat the whole thing anyway, and that will precipitate other consequences...

Question about Susytwo's Strawberry Rhubarb Coffee Cake

The strawberry/rhubarb combo is a very traditional blend. It's hard to sub for it. I'd be more inclined to try a strawberry/apple or strawberry/ blueberry mixture. Adjust the sugar a little if you think it might be too sweet, you can always add more as the filling is cooking. Strawberry/pineapple might be good too..... Nancy

There is a recipe using a mix and I think it fills 8 mugs. Then I found these recipes which I haven't tried yet but they sound good. CARROT CAKE IN A MUG (1 mug cake) This carrot cake recipe makes a wonderful individual gift. It's also a two part gift because you present it in a mug. After the cake is baked and drizzled with glaze, place it in a small clear plastic or cello bag and tie it with raffia, twine, or curly ribbon. Tie a gift tag into the ribbon. 1 mug, oven proof and has the volume of 2 cups 5 tablespoons all-purpose flour 1 tablespoon granulated sugar 1 tablespoons brown sugar 1 teaspoon baking powder 1/8 teaspoon cinnamon 1/8 teaspoon salt 2 tablespoon shredded coconut 1 tablespoon raisins or walnuts 2 tablespoons grated carrot 2 tablespoons vegetable oil 1 egg, lightly beaten GLAZE INGREDIENTS: 1/4 cup powdered sugar 1 teaspoon milk PINEAPPLE CAKE IN A MUG (2 cup mug) After the cake is baked and cooled to room temperature wrap it in a clear bag with ribbon or raffia tied above the mug to hold the bag closed. Another way of presenting this gift is to place the cake baked in a mug in a small wicker basket lined with a napkin or tea towel and include several bags of herbal tea or a small can of gourmet coffee. 1 oven proof mug with a volume of at least 2 cups 1 tablespoon melted butter 1/4 brown sugar, packed 4 ounces pineapple tidbits, drained 1/2 cup all\-purpose flour 1/2 teaspoon baking powder pinch of salt 3 tablespoons granulated sugar 2 tablespoons butter, room temperature 1 egg 3 tablespoons milk Preheat oven to 350 degrees. Spray inside of mug with nonstick cooking spray. Combine melted butter and brown sugar in the mug until well blended, add pineapple tidbits, and set aside. In a small bowl combine flour, baking powder, and salt; set aside. Cream granulated sugar and room temperature butter until light and creamy. Add egg and blend well. Stir in dry ingredients and stir until blended. Add milk and stir until batter is smooth. Pour into mug allowing room at the top for rising. Bake for 25\-30 minutes or until toothpick inserted comes out clean. Cool on wire rack. PUMPKING BREAD IN A MUG (serves 1) After the bread is baked and cooled, place the bread in the mug in a clear plastic or cello bag and close it with curly ribbon or raffia. Add a gift tag noting that it is pumpkin bread 1 ovenproof mug with a volume of 1-1/2 to 2 cups 1/3 cup all-purpose flour 2 tablespoons granulated sugar 1 tablespoon brown sugar, packed 1 tablespoon currents or raisins 1/2 teaspoon baking powder 1/2 teaspoon ground cinnamon 1/8 teaspoon salt 3 tablespoons canned solid-pack pumpkin 1 egg, slightly beaten 1 tablespoon vegetable oil GLAZE INGREDIENTS: 1/4 cup powdered sugar 1 teaspoon lemon juice or water Preheat oven to 350 degrees. Spray inside of ovenproof mug with nonstick cooking spray. Mix flour, granulated sugar, brown sugar, currents or raisins, baking powder, cinnamon, and salt in a bowl. Add pumpkin, egg, and vegetable oil and stir until well blended. Pour batter into mug allowing space at the top for rising. Bake for 30 minutes or until toothpick inserted into the center of the bread comes out clean. Allow to cool to room temperature. Make glaze by mixing the powdered sugar and lemon juice; drizzle over the bread. BANANA BREAD w/ choc chips in a mug (serves 1) 1 oven proof mug with the volume of 1\-1/2 to 2 cups 1/4 cup all\-purpose flour 2 tablespoons granulated sugar 1/4 teaspoon baking soda 1/8 teaspoon ground cinnamon pinch of salt 1 tablespoon finely chopped walnuts 2 tablespoons mini chocolate chips 1/2 ripe banana 1 egg 1 tablespoon canola or vegetable oil OPTION: additional 2 tablespoons mini chocolate chips for glaze Preheat oven to 350 degrees. Spray the inside of oven proof mug with nonstick cooking spray. Mix together the flour, sugar, baking soda, cinnamon, salt, walnuts, and 2 tablespoons mini chocolate chips. Set aside. Mash banana, egg, and oil in small bowl to combine. Stir in mixture set aside; blend well. Pour batter into prepared mug (3/4 full for rising space) and bake for 25\-30 minutes until toothpick inserted comes out clean. If you make any let me know how they turn out.

It is so-so. I doubt if I make it again. I didn't have cake flour so used all purpose, but a bit less. I am amazed that there is 1 whole egg for this amount of flour and sugar, etc.

I think I'll try cooking regular cake mix in mugs and see what happens. Would that work?

I just read all the comments on the site. They are a lot more complimentary than I had read earlier on another site. I think I WILL try it again but leave out the egg and see what happens. Just a reminder, be sure that your mug will stand the temperature in the microwave

I saw these at a Christmas craft show a couple of years ago, minus the egg and milk, of course. They were in colorful holiday mugs, and were selling like (hot)cakes.

I saw that somewhere a couple weeks ago and copied it down...Looks interesting.

My thought was, when I'm having a real hunger for something sweet, it might be a good idea for me...then I won't have a whole pan sitting there calling my name.

phyllis mn - I'm always interested in things for a Christmas bazaar that I contribute to. Did they have the dry ingredients in the mug, plus info to add the egg, milk and oil? Sounds like it could be a geat idea.

Here's substitute for cake flour

All-purpose flour
Corn starch
Step1Mix 1 3/4 cup of all-purpose flour with 1/4 cup of cornstarch. This yields 2 cups of cake flour for your recipe.
Step2An easy way to do this is to put 2 tablespoons of the cornstarch into the bottom of a 1 cup measure, then fill to the top with flour.
Step3Sift the flour with your dry ingredients as usual.

Ivamae, that's exactly what they had, with the directions.

At a DD's church bazaar, they offered the following, put in a pint jar:
1/3 cup sugar
1/3 cup packed brown sugar
1/3 cup quick oats
2/3 cup flour
1 tsp. BP
2 T. chopped pecans
1/4 cup Rice Krispies
1/4 cup chocolate chips
1/4 cup white chips.

Place all ingredients in order in a pint jar. You must firmly press all ingredients (especially the brown sugar, oats, and flour) into the jar to make them all fit. Close with a lid and decorate the jar.

Recipe to attach: Combine 1 egg and 1/2 cup butter flavored shortening (I used margarine). Shape dough into walnut sized balls. Place two inches apart on greased cookie sheet. Bake at 350Âº for about 10 to 12 minutes. Makes about 24 cookies.

And I was so looking forward to a quickie dessert!

I didn't have cake flour so I used a bit of cornstarch with the regular flour. It did rise up nicely, came out of the mug nicely and I can't find the words to describe the flavor and texture. It came in second to the meatloaf in the Stouffers meatloaf dinner I had.

Enough said. I'll never have either one again!!!

Some 30 + years ago, when we girls were at home, Mum would make up a regular cake mix and store it in the fridge. She would put a spoonful of canned pie filling into a cup, followed by 2 or 3 tablespoons of the cake batter. Into the microwave for 1 or 2 minutes, voila, upside down cake! Easy to change the fruit flavors, and the cake as well. Each person could top with coolwhip, canned milk whatever they wanted.

I did make it again and it was absolutely gross. When still real warm it was very rubbery but when it cooled it was firm enough to build a house on. Into the garbage it went, along with the recipe.

I would like though to try scottymam's suggestion and I'm going to, sooner or later.

I do sort of what scottymom said. I go to Weight Watchers, so I change it a bit. I make up a cake mix batter and just keep it in the fridge. Then, when I want a quick, small dessert, I put a little in a bowl or cup and nuke it...very good. But...with Weight Watchers, you mix a can of diet soda in the cake mix. Two ingredients..the mix and soda...any flavor of soda will do...it's a wondferful, fast, treat.

With regard to the Mug Mix ... how about - half of an egg?

With regard to the "*diet*" pop ...

... has anyone heard what they really put into that stuff?

I've heard that if we knew, we wouldn't touch it with a ten foot pole.

Actually - I prefer simple water.

With an ice cube, on occasion (especially since I don't have air conditioning - but can turn on the furnace fan, with the back panel removed, to shoot cool basement air up into the house, when the heat gets heavy).

Enjoy your food - and your drink - and your good health (while it lasts).

You've heard the reply that the person with a disability made to the able-bodied person who said that s/he wasn't disabled?

The person with the limitation's reply was, " ... Not yet".

Which reply should be of (increasing?) interest to us old coots. Who aren't (or claim not to be) disabled ... unless it may be of the mental variety.

I experimented after the first time with making 2 batches using 1 egg. It wasn't much of an improvment. I did eat quie a bit of it and ended up with heart burn a lot of the night. I'm done experimening with it but will try the other, but as O.J. says - with water.
