5 minute cake in a coffee mug

Saw this at the cooking forums, and found this link.

NOTE: I have not made this.

And I read it has to be cake flour.

Worth trying, just to see if it is good or NOT!

Hi Maggie, here is the recipe. There was also a link to a video somewhere... From Artisan Bread in Five Minutes a Day: The Discovery that Revolutionizes Home Baking by Jeff Hertzberg and Zoe Francois (Thomas Dunne Books, 2007). Copyright 2007 by Jeff Hertzberg and Zoe Francois. Serves 4 Note: This recipe must be prepared in advance. 1-1/2 tablespoons granulated yeast (about 1-1/2 packets) 1-1/2 tablespoons kosher salt 6-1/2 cups unbleached flour, plus extra for dusting dough Cornmeal In a large plastic resealable container, mix yeast and salt into 3 cups lukewarm (about 100 degrees) water. Using a large spoon, stir in flour, mixing until mixture is uniformly moist with no dry patches. Do not knead. Dough will be wet and loose enough to conform to shape of plastic container. Cover, but not with an airtight lid. Let dough rise at room temperature, until dough begins to flatten on top or collapse, at least 2 hours and up to 5 hours. (At this point, dough can be refrigerated up to 2 weeks; refrigerated dough is easier to work with than room-temperature dough, so the authors recommend that first-time bakers refrigerate dough overnight or at least 3 hours.) When ready to bake, sprinkle cornmeal on a pizza peel. Place a broiler pan on bottom rack of oven. Place baking stone on middle rack and repeat oven to 450 degrees, preheating baking stone for at least 20 minutes. Sprinkle a little flour on dough and on your hands. Pull dough up and, using a serrated knife, cut off a grapefruit-size piece (about 1 pound). Working for 30 to 60 seconds (and adding flour as needed to prevent dough from sticking to hands; most dusting flour will fall off, it's not intended to be incorporated into dough), turn dough in hands, gently stretching surface of dough, rotating ball a quarter-turn as you go, creating a rounded top and a bunched bottom. Place shaped dough on prepared pizza peel and let rest, uncovered, for 40 minutes. Repeat with remaining dough or refrigerate it in lidded container. (Even one day's storage improves flavor and texture of bread. Dough can also be frozen in 1-pound portions in airtight containers and defrosted overnight in refrigerator prior to baking day.) Dust dough with flour. Using a serrated knife, slash top of dough in three parallel, Â¼-inch deep cuts (or in a tic-tac-toe pattern). Slide dough onto preheated baking stone. Pour 1 cup hot tap water into broiler pan and quickly close oven door to trap steam. Bake until crust is well-browned and firm to the touch, about 30 minutes. Remove from oven to a wire rack and cool completely.

Here it is: Marlen's Coffeecake 1 box white cake mix with NO pudding in the mix* 1 box instant vanilla pudding (small) 8 oz sour cream 1/2 cup vegetable oil 4 eggs Mix all ingredients together at once. Beat AT LEAST 5 minutes-DON'T UNDERBEAT! Batter will be a bit stiff. Topping: 1 cup granulated sugar 1 cup chopped walnuts 1 1/2 heaping teaspoons ground cinnamon 1 1/2 heaping teaspoons cocoa Preheat oven to 350 degrees. Butter and flour 10 inch Bundt pan. Put half of the batter in pan and sprinkle with half the topping. Add the rest of the batter. Sprinkle the rest of the topping. CUt through well with knife so that topping is mixed with the batter. Bake one hour at 350 degrees. Cool 10 minutes before turning out. Note from Marlen: I like to make a little extra topping and sprinkle some of it on the pan before adding the batter. *If using cake mix with vanilla pudding in the mix, omit the second ingredient.

When I first posted this recipe, I had no idea I would spend more than 5 minutes considering its possibilities. Can you believe I've spent the past hour playing with variations and options? First, I tried Cloud Swift's version. Frankly, I found it a tad dry. I microwaved it, so as to give the most effective side-by-side comparason (besides, I don't like the bake feature in my toaster oven, a small appliance that may not survive the transfer to the new kitchen). My following experiments were cocoa free attempts for two of my sewing buddies (yes, I sew when I can escape from the kitchen). I'm so glad none of them are gluten intolerant....#1 was a burnt sugar butterscotch type thing. I micro'd 2 tbsp butter with 3 tbsp brown sugar, then mixed in an egg, 3 tbsp milk, 6 tbsp flour, plus vanilla extract. It was OK, but bland. If I had some of those little butterscotch baking chips, or even some chopped walnuts, I'd have added those. Next, and most successful, if I may say so, was the orange poppyseed log. BTW, I cut down on the sugar and fat of these two experiments, as recommended by a few critics. The slightly reduced volume is just enough to keep the mixture from jumping out of my mug during the bake process. Anyway, for this one, I used 5 tbsp flour, 3 tbsp sugar, egg, 3 tbsp milk, 2 tbsp oil, 1 tsp poppyseeds, and a spash of orange extract. Samples of each are sitting on the kitchen counter, awaiting the teenaged son to return from work. For myself, I still prefer chocolate. Also the texture resulting from the egg and milk, ingredients that I always have on hand. Once again, it is a huge mistake to compare these to real baking. If I have to make enough cake for more than myself, I'll use a more conventional method. If I make a more conventional cake for just myself, I'll eat the whole thing anyway, and that will precipitate other consequences...

That is very similar to what I make, the picture is mine: If I made them like Paula's recipe - they wouldn't be as good (her ingredients are fine, but the time/technique is a bit off) I use Rhodes Texas Rolls - they are just a little bit bigger than the regular ones. I spray my Bundt pan with Pam, then sprinkle whole pecans on the bottom. I melt 1/3 cup of butter and add brown sugar and 2 tablespoons milk or cream to it. I use enough sugar to make a heavy syrup. I don't cook this - just add it to the melted butter. Add 1 teaspoon of cinnamon to this. Pour this over the pecans, then add 12 Texas rolls on top. I spray those with Pam and cover with plastic wrap. If I leave them out over night - it must be quite cool. 8-10 hours in a warm house and they would be poofed over the top of the pan, LOL!!!!! If it is warmer weather, I place them in the fridge overnight - then pop them in a warm oven (170Âº) until they rise. It doesn't take long. I bake at 350Âº - but 30 minutes would be too long. Check at 20 minutes. I have had them with the butterscotch pudding and that is good too.

It is so-so. I doubt if I make it again. I didn't have cake flour so used all purpose, but a bit less. I am amazed that there is 1 whole egg for this amount of flour and sugar, etc.

I think I'll try cooking regular cake mix in mugs and see what happens. Would that work?

I just read all the comments on the site. They are a lot more complimentary than I had read earlier on another site. I think I WILL try it again but leave out the egg and see what happens. Just a reminder, be sure that your mug will stand the temperature in the microwave

I saw these at a Christmas craft show a couple of years ago, minus the egg and milk, of course. They were in colorful holiday mugs, and were selling like (hot)cakes.

I saw that somewhere a couple weeks ago and copied it down...Looks interesting.

My thought was, when I'm having a real hunger for something sweet, it might be a good idea for me...then I won't have a whole pan sitting there calling my name.

phyllis mn - I'm always interested in things for a Christmas bazaar that I contribute to. Did they have the dry ingredients in the mug, plus info to add the egg, milk and oil? Sounds like it could be a geat idea.

Here's substitute for cake flour

All-purpose flour
Corn starch
Step1Mix 1 3/4 cup of all-purpose flour with 1/4 cup of cornstarch. This yields 2 cups of cake flour for your recipe.
Step2An easy way to do this is to put 2 tablespoons of the cornstarch into the bottom of a 1 cup measure, then fill to the top with flour.
Step3Sift the flour with your dry ingredients as usual.

Ivamae, that's exactly what they had, with the directions.

At a DD's church bazaar, they offered the following, put in a pint jar:
1/3 cup sugar
1/3 cup packed brown sugar
1/3 cup quick oats
2/3 cup flour
1 tsp. BP
2 T. chopped pecans
1/4 cup Rice Krispies
1/4 cup chocolate chips
1/4 cup white chips.

Place all ingredients in order in a pint jar. You must firmly press all ingredients (especially the brown sugar, oats, and flour) into the jar to make them all fit. Close with a lid and decorate the jar.

Recipe to attach: Combine 1 egg and 1/2 cup butter flavored shortening (I used margarine). Shape dough into walnut sized balls. Place two inches apart on greased cookie sheet. Bake at 350Âº for about 10 to 12 minutes. Makes about 24 cookies.

And I was so looking forward to a quickie dessert!

I didn't have cake flour so I used a bit of cornstarch with the regular flour. It did rise up nicely, came out of the mug nicely and I can't find the words to describe the flavor and texture. It came in second to the meatloaf in the Stouffers meatloaf dinner I had.

Enough said. I'll never have either one again!!!

OK, I think I'll skip it, too.....but the cookies I posted above are really good, but they are baked in the regular oven.

Some 30 + years ago, when we girls were at home, Mum would make up a regular cake mix and store it in the fridge. She would put a spoonful of canned pie filling into a cup, followed by 2 or 3 tablespoons of the cake batter. Into the microwave for 1 or 2 minutes, voila, upside down cake! Easy to change the fruit flavors, and the cake as well. Each person could top with coolwhip, canned milk whatever they wanted.

I did make it again and it was absolutely gross. When still real warm it was very rubbery but when it cooled it was firm enough to build a house on. Into the garbage it went, along with the recipe.

I would like though to try scottymam's suggestion and I'm going to, sooner or later.

I do sort of what scottymom said. I go to Weight Watchers, so I change it a bit. I make up a cake mix batter and just keep it in the fridge. Then, when I want a quick, small dessert, I put a little in a bowl or cup and nuke it...very good. But...with Weight Watchers, you mix a can of diet soda in the cake mix. Two ingredients..the mix and soda...any flavor of soda will do...it's a wondferful, fast, treat.

With regard to the Mug Mix ... how about - half of an egg?

With regard to the "*diet*" pop ...

... has anyone heard what they really put into that stuff?

I've heard that if we knew, we wouldn't touch it with a ten foot pole.

Actually - I prefer simple water.

With an ice cube, on occasion (especially since I don't have air conditioning - but can turn on the furnace fan, with the back panel removed, to shoot cool basement air up into the house, when the heat gets heavy).

Enjoy your food - and your drink - and your good health (while it lasts).

You've heard the reply that the person with a disability made to the able-bodied person who said that s/he wasn't disabled?

The person with the limitation's reply was, " ... Not yet".

Which reply should be of (increasing?) interest to us old coots. Who aren't (or claim not to be) disabled ... unless it may be of the mental variety.

I experimented after the first time with making 2 batches using 1 egg. It wasn't much of an improvment. I did eat quie a bit of it and ended up with heart burn a lot of the night. I'm done experimening with it but will try the other, but as O.J. says - with water.
