Hey Rita, there are some baked potatoes recipes and ideas on the Celery, Potato thread on page 2. (Don't know how to do a link for you) Not sure of a mashed potato casserole, but I do have an awesome one that I should share anyway.

could it be the Jungle Bread recipe from Ms Glenda? here it is... Jamaican Jungle Bread 1 1/2 cup flour, all-purpose 1 cup 3 minute brand quick oats 1/2 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 1/2 cup flaked coconut 1/2 cup walnuts or almonds or pecans, chopped (toasted) 3 bananas, mashed 8 oz crushed pineapple 1/4 cup vegetable oil 2 eggs Mix flour, oats, sugar, baking powder, baking soda, cinnamon, salt, coconut and nuts in a large bowl. Mix bananas, pineapple, oil and eggs in a medium bowl. Add all to large bowl and stir, but not too much. Bake on a greased pan at 350 degrees for 50 minutes. For the glaze, mix 1/2 cup of confectioners sugar with 1 Tb of butter and add either 1/2 ts coconut or vanilla extract. Add 2 ts of milk. Pour this glaze over the bread. Makes one loaf.

This one sounds similar: FOUR LAYER PUDDING DESSERT (from Lynda's Recipe Box) FIRST LAYER; 1 cup flour 1/2 cup chopped nuts, I use pecans 1 stick melted butter - 1/2 cup Combine all ingredients in a bowl; scatter the crust mixture over the bottom of a 9x13 in baking pan and press together to form a crust. Bake in a preheated 350 degree oven for 15 minutes. Cool. SECOND LAYER; 1 -8 ounce package cream cheese, softened to room temperature 1 cup powdered sugar 8 ounces of whipped topping, thawed ( like Cool Whip) Mix together the cream cheese and sugar; then fold in the whipped topping. Place spoonfuls of this mixture all over the cooled crust. Gently spread out the cream cheese to cover the crust, taking care to not break the crust. THIRD LAYER; 2 packages of instant chocolate pudding (or other flavor of choice) 3 cups of milk Combine pudding mixes and milk and stir until well blended and thick. Spoon pudding over cream cheese layer and carefully spread it out. FOURTH LAYER; 8 ounces of thawed whipped topping ( I sometimes use a little less- it's rich!) nuts, or chocolate to put on top, if desired Spread topping evenly over the pudding layer. Top with nuts, chocolate shavings or sifted cocoa, if desired. Refrigerate for several hours before serving. Enjoy!

Turn off stove & add 8 cups chopped rhubarb. Coat rhubarb until all covered with sauce. Press ¾ of crumb mixture into 9x13 pan as a base, spoon filling in evenly, then cover with remaining crumbs. Bake at 350 for 30 minutes.

Maybe something like this? Can be layered with chicken, beans, etc.... I prefer homemade corn tortillas but store bought will work too. Home Cookin Chapter: Recipes From Thibeault's Table Stacked Enchiladas ================== Source: Southwest Cookbook Vegetable oil for frying 12 corn tortillas (6 inches) 1-1/2 cups (12 fl ounces) chili Chili Sauce (recipe on page 195) 2 cups (8 ounces) grated Monterrey Jack or Cheddar Cheese 3/4 cup finely chopped onion Preheat oven to 350°F. Pour vegetable oil into a medium , heavy skilled to depth of 1/2 inch. Heat the oil over medium high heat to 375°F, or until a strip of tortilla browns in 60 seconds. Soften the tortillas, one at a time, for about 5 seconds per side in the hot oil and drain on paper towels. Heat the green chili sauce in a shallow pan and dip each softened tortilla into the sauce. Place 1 coated tortilla on an oven proof plate and top with 1 tablespoons green chili sauce, 2 tablespoons grated cheese and 1 tablespoon chopped onion; repeat twice so that 1 serving contains 3 layered tortillas. Repeat with the remaining ingredients to make 4 tortilla stacks. Bake the stacks for 3 to 5 minutes, or until the cheese melts. NOTE: Add cooked chicken and or pinto or black beans between layers. Green Chili Sauce 1 Jalapeno chili seeded and diced 1 garlic clove crushed 1/4 cup chopped green onions 4 tomatillos, husked and diced (or use canned) 1-1/2 cups chicken stock 2 new Mexico green or Anaheim chilies, roasted, peeled, cored, seeded and diced. 1/4 cup chopped fresh cilantro 1 tablespoon fresh lime juice 1 tablespoon heavy cream Salt and freshly ground pepper to taste In a medium saucepan, place the jalapeno , garlic, green onions, tomatillos and chicken stock. Bring to a boil over medium-high heat' reduce heat and simmer until the liquid is reduced to about 1 cup about 15 to 20 minutes. Pour the chicken stock mixture into a blender or food processor. Add the Anaheim chilies, cilantro and lime juice; puree until smooth. Add salt and pepper. Add the cream and mix again. Serve warm. Keep 1 to 2 days refrigerated. ) Here is a link that might be useful: Corn Tortillas

Buffet Potatoes
The buffet potatoes are cheese potatoes. I don't have a real recipe but these are what I put in it.
Partially cooked cubed potatoes, or use hash browns (frozen) 2 pound package (thaw before using)
1/2 of a vidalia onion finally chopped
2 cans of cream of chicken soup
16 oz. of sour cream
1/2 pound of shredded cheddar cheese or what ever amount you have and want to put in it.
Mix the above well and put in a 9 x 13 greased dish or pan.

Corn flakes crushed for the top and mix with a 1/2 cup of melted butter.

Spread the topping and bake in a preheated oven at 350 until nice and bubbly and toasty brown on the top. Not sure how long I bake it.

This is the recipe I posted on June 30th after someone asked for my recipe. Maybe this was it, don't know. If you use your own potatoes, you can microwave them and peel them and cube them.

Mine are similar to Sue's except I don't put any soup in it.
Leftover mashed with onion, cheese and sour cream.
Bake in the oven till the cheese is melted. The flavour is just like twice-baked but a lot less hassle. We love them.

I was the one who asked for marilyn_sue's buffet potato recipe, and I made it for a 4th of July cookout. It was so good. There was not a bit of it left over. I used the frozen hash browns.
