What Do You Like To Serve With...............?

I am fixing corn bread and beans today for supper. What do you like to fix to go along with them? My Mother used to make flat dumplings and put in the broth of the beans. I am not doing that today, but they sure did taste good. Let's hear you ideas on what else to fix.

We had white acre peas, cornbread, a slice of fried center cut ham and sliced tomatoes last night.

I'm not having a Super Bowl party this year, but this is a very good way to celebrate it without too much work. We eat lots of Mexican food here in south Texas. Depending on how much time, effort, availability of food and money you want to spend, you might want to consider serving all or some of the following foods. If possible, I would serve lots of different meats including ground beef with taco seasoning, beef and chicken fajita meats, shredded pork, fried and/or grilled shrimp and fried and/or grilled fish (fish tacos). Also be sure to serve corn and flour tortillas and crispy taco shells. For toppings have on hand shredded lettuce, diced tomatoes, both sweet yellow and red onions, black olives, stuffed olives, several types of shredded cheese, chili peppers including jalapeños, serranos and habaneros, sliced avocadoes, guacamole, sour cream, salsa, pico de gallo, and sliced lemons and limes. And beans (frijoles), pintos and/or black, frijoles soup and/or refried beans. I would skip the boxed Spanish rice. The Mexican restaurants down here serve yellow rice which I much prefer. Brown the yellow rice in a little oil with diced onions and garlic, then substitute chicken broth for water, and I add a can of drained baby peas and a can of diced tomatoes and green chilies, RO*TEL or Hatch. Both are very good. Also lots of chips served with chili con queso, guacamole, salsa and pico de gallo. And you might want to make up a big tray of nachos that can include meats, refried beans, cheese, etc. Jalapeño poppers would be good, i.e. peppers stuffed with cream cheese and wrapped in bacon and cooked. For drinks be sure to have margaritas, frozen, on the rocks, with salt, without salt, sliced limes and be sure to add a couple of green stuffed olives for an extra flavor. And be sure to use a good tequila. And Mexican beer served with sliced limes and salt is good. For desert fresh fruit, sopapillas, ice cream and/or flan. The following might be of some help. Ortega has some good suggestions. It states the following: A Taco Buffet When you have a taquisa (taco party), you can join in on the festivities because your guest fill their tacos to their own liking. Have both crispy corn taco shells and soft flour tortillas warmed and on hand. Then, let your guest choose from a variety of fillings: shredded beef, pork or chicken; different varieties of refried beans; a vegetable filling, such as, fried potatoes and zucchini with chiles; crisp, cool garnishes, such as, shredded lettuce, dices tomatoes, sliced radishes, sliced green onions, sliced ripe olives and fresh cilantro; an assortment of shredded and crumbled cheeses; sour cream and guacamole; and, of course a range of salsas to satisfy all tastes, from mild to fiery.

I like parts of all these suggestions. I like the mashed potatoes, for flavor and texture contrast and because they're substantial--in Zone 7 and February I assume your weather isn't balmy. How about roasted broccoli (broccoli, salt, olive oil, and a spoonful of water) for color and another flavor-texture contrast? And if you know a good and simple side with carrots that would be good, again for color and variety. For a salad, Boston lettuce with frozen peas (this is the only frozen vegetable I use, and is very popular in our house, especially in winter) and perhaps sweet red pepper, with lemon vinaigrette; or the salad of mixed greens mentioned above. And if you don't serve pasta or rice you need to have some good bread on hand.

Some more suggestions: Serve it cold with potato salad. Dice it and use in omelets, or make a ham quiche. Make a super ham sandwich: good, fresh bread smeared with mayonnaise and topped with thin slices of ham, slices of good cheese, slices of tomato, bits of crispy bacon and butter-sautÃ©ed mushrooms warm from the pan. Serve it warm with sugar-glazed potatoes, redcurrant jelly, Brussels sprouts and a salad. Make the salad from finely sliced white cabbage, grated carrots and quartered grapes, sprinkle a little brown sugar over it and drizzle some lemon juice over that, toss and let stand for about 10 minutes before serving. Glaze the ham with a mixture of brown sugar, mustard and ketchup and serve with plain boiled potatoes, pineapple slices and Waldorf salad.

I absolutely love my weathered or leathered black pearl granite countertops. (One shop called them weathered, the other leathered.) They NEVER show stains--but they are black, after all. They are easy-peasy to clean--just a quick wipe. What look like pits in the photo below, taken under angled light, are only slight indentations. Nothing sticks in them. I can roll out pie dough and wipe off the countertop with a soapy cloth. It was sealed when installed, I guess. I have done nothing else to it in three years except treasure it and wash it with soapy water when grease splatters on it from the stove. The granite is a tactile delight. Several friends stand and pet it idly, the way one does a friendly dog. No one ever pets my island, which is a different granite in a traditional finish. Yours will be gorgeous. May I stop by and pet it?

A salad with cherry tomatoes and carrot curls (with a light vinaigrette dressing). I think something cold and crisp would taste great with something warm and hearty. What a great meal! Lucky you.

We don't eat anything with them. It's one of my favorite meals. Sometimes I do dumplings, too (the bready, fluffy kind) and put the beans over a big fat dumpling. Haven't done that for a while. But now I'm wanting it!
A bowl of beans and corn bread is plenty to fill you up!

Ah, Great Northerns, probably my favorite! I would only have cornbread, the beans and chopped onions.

If I were adding something for the hearty big eaters, it would be fried potatoes and slaw.

What time will it all be ready?

I'll take chopped raw onions on the side to put in with my beans and cornbread..Ohhhh... that sounds soooo good. With sweet tea you can't get a better meal. Yum Yum..

That just sounds good for my dinner tonight too, but I am having leftovers tonite. Maybe tomorrow nite.(:-)

Fried taters & onions (the down & greasy kind). Preferably pintos but great northern are good too and cornbread (no sugar please, that's corn muffin in my neck of the woods)

I'm having great northerns tonight too. I'll nuke a potato, slice it, then fry in a little bit of olive oil. Plus I got some green onions at the store today. I ate my 'dessert' an hour ago.........plain yogurt with fresh strawberries and blueberries.

Just Chopped sweet vidalia onion to put on top of the beans. You do have some ham in those beans right? And real butter for the corn bread.

Thanks for all the good replies. I ended up just having beans and cornbread. I already had cole slaw, but was too full for it. Hubby isn't that fond of beans but he ate a serving and some cornbread. He also had pie. He doesn't eat cole slaw, onions, tomatoes, not a big fan of fried potatoes, he is so hard to cook for! Me, I like all that stuff. I sent the rest of the Great Northerns and a pan of cornbread home with Amber for their supper. So there are no beans left here, just some cornbread!

Me? I'd need a salad and some fresh fruit to complete the meal. The beans would a chili with meat and cheese and red onions.

Fried potatoes, green onions, and sliced tomatoes for me. That all sounds so good to me now, but when I was growing up, those were our evening meal more times than not. I swore that "when I grow up and get married, I will never have to eat that stuff again"! Maybe the difference is that now I don't have to eat it if I don't want it?
