Thanks for The Zucchini Recipes, Now I have This.....

Thanks for all who posted the zucchini recipes. I have them copied and hope to try them. Now I have this big head of cabbage and more in Amber's garden. Do you have favorite recipes for cabbage?

Oh yes, I love cabbage.

Aunt Nancy's Cole Slaw is one of my favorite cole slaw recipes. It has pineapple in it.

Sweet-and-Sour Cabbage is really good. It also uses carrots and peppers - very healthy.

Smoked Sausage Skillet is a recipe I've made several times. It has noodles and smoked sausage with a light mustard flavored sauce.

Cabbage soup with hamburger, potatoes, carrots, tomatoes, etc.
It's nice and thick, kind of like stew. But good and filling!

You're pushing it for time, but seeds are cheap, so what do you have to lose? If you can provide protection from frost, should you get a one or 2 night cold front, you'll be ok. Typically, at least here in WI where I am, they say the 1st frost averages October 4, but that'd not written in stone. You'll be kicking yourself if the summer kicks around a bit longer and it stays decent a few weeks longer, and you didn't plant. I can recall having late October temps in the 80's, so I agree with Wayne, go for it. Joe

Hey, Gurley, Thanks for the recipes! I have one or two recipes for Zuch bread, but will try yours. Sounds yummy! I've tasted a chocolate version, but did not have a recipe to bake it. Double thanks! Sounds yum! I use substitute melted butter for the hydrogenated oil in every recipe, cake mix or brownie mix that calls for vegetable oils, though. I have a recipe for soft and chewy Zuch cookies that I can post if anyone wants it. I also have one for an easy & fast Microwave 'Zuch & garlic-cheese dish'. This tastes great with any Italian meal. Wonderful alone for lunch (dinner) with toasted garlic bread and iced tea or with a nice glass of red wine. I like to thinly slice tomatoes and zuchinni and even some crookneck squash and put on a Tony's brand frozen pizza. Drizzle w/a bit of virgin olive oil, then sprinkle with garlic powder, basil, and Parmesan cheese, and bake. Turns a not-so-healthy junk food into something delicious and really good for you. ~ SweetAnnie4u

My first reaction was "huh? What's she talking about? Grated zucchini is grated zucchini, right?" Then realized maybe there were particular herbs and spices mixed in. Thing about grated zucchini is that it melts if left standing for any length of time. So the first step is to salt it in a colander and let is drain for at least 30 minutes. Rinse off the salt, squeeze the zucchini to remove as much additional moisture as you can. Then use it for your topping. The possibilities are endless, from simply adding salt & pepper, to using it as a substitute for cucumber in various yoghurt sauces. Or use it as a substitute for cabbage in coleslaw. Zucchini has little flavor of its own, but readily grabs flavors from whatever it's mixed with. So you can be pretty creative with it as a topping. Here's one possibility: Zucchini Raita 4 large zucchini 2 tbls salt 2 cups plain yogurt 2 garlic cloves, mashed 1 tsp ground cumin seed 2 tbls cilantro (mint or parsley can substitute)minced 1 tsp paprika Pinch cayenne. Peel and seed the zukes. Grate them and put in a colander. Sprinkle with the salt and mix. Let stand 30 minutes. Rinse and squeeze out the moisture. Mix the yogurt, garlic, cumin seed and paprika in a shallow serving bowl. Add the cucumber and mix well. Make designs on the top with the paprika and cilantro. Or just mix them in if presentation isn't important.

-Prep sink. This may be useful in a multi-cook household or a huge kitchen, but I hardly ever used the one I had and it was just once more thing to clean. -Garbage disposal. My worms do a much better job, don't take up electricity and never smell or require cleaning. -Fancy multi-function toaster, oven, rotisserie, pizza, etc. Does nothing well. -Trash can with a motion sensor. Everyone I know who has one has them break in under a year. Mine only took 4 months to break. A foot pedal is much more reliable and a lot cheaper to replace. -Stainless steel sink. What a pain to clean. You can call it patina, butafter a while they don't look clean no matter what you do. (The one in my apartment right now looks positively foul no matter how much Barkeeper's Friend you use.) Of course cast iron will eventually chip and I don't know if the granite composite sinks will stand the test of time -Range-top grill. Only pay for these if you have a bodacious vent system and no way to have an outdoor grill. They are better than the George Foreman-like grills but not a patch on a decent outdoor gas grill or charcoal. ---- As for sink tip-outs... since discovering them I have knocked the front panel off every sink in every home I've rented or owned and installed these. In the bathroom they are perfect for the tweezers and nail files and such. In the kitchen, the sponges, scrubbers, stoppers and the toothbrush you use for cleaning around the faucet plate are neatly hidden away but close at hand. Love 'em!

GERMAN RED CABBAGE

1 sm. head of red cabbage
1 med. onion
2 whole cloves
1 bay leaf
1 med. apple
1/2 lb. bacon
1 to 2 tsp. sugar
1/8 liter water
2 tbsp. vinegar
3 to 4 tbsp. red wine

Remove bad leaves around red cabbage, wash and divide into quarters. Cut red cabbage into thin slices. Cut bacon in small slices. Put in pot, let brown, sprinkle with sugar, add red cabbage. Toss in pot, spike onion with whole cloves, peel apple, cut in quarters and add into pot. Add 1/8 liter water. Cook at mild temperature for 1 hour. From time to time, check whether enough water is in pot, if not, add a little. Shortly before red cabbage is done, add vinegar and red wine. This gives the nice red color. To thicken gravy, sprinkle a little flour over cabbage, stir.

I like it just sauteed in bacon grease. Cabbage rolls are good too, but I've never made them.

Oriental Cabbage salad is one of our favorites
1 head of cabbage
4 or 5 green onions
Shred and chill the above

Before serving : add 3 tbs sunflower seeds
1/2 cup slivered toasted almonds
MIX IN A JAR;
3 tbsp sugar
2 tbsp vinegar
1/2 c oil
Dry raman seasoning mix
When ready to serve break up ramen noodles and put in salad and put dressing on

Cabbage and hamburger casserole. Chopped cabbage, browned ground beef, mushrooms, even green beans (optional), Add a can of cream of mushroom soup, salt/pepper and top with buttered, broken saltine crackers. You can also sprinkle with grated cheese. Bake until hot and bubbly. yuummmmmm!

My Mom's recipe:
Brown 1-2 # ground meat (I use 1/2 ground Turkey) with LOTS of onions. Drain off the fat. Add about 1/2 cup beef broth. Add a big sliced up, washed up cabbage(which still has a lot of water clinging to it) and cook until the cabbage is tender, but still firm, mixing it up about every 10 mins. Add about 1/2 cup sour cream and about 6 oz. cooked, hot noodles.
