Banana bread recipe with sour cream.....? for Paula PA

That is the same recipe I've used for years. I've also used pumpkin and apple in this recipe. I add more spices when I do that.

This is one of those recipes that is so good, I pretty much ignore every other banana bread recipe I come across.

My question is...you said when you use pumpkin or apple...you use "more" spices...do you use some spices in your banana bread?

No, sorry, I make the banana bread recipe as it was posted - I don't think there are any spices in it but for pumpkin or apple I add things like pumpkin pie spice, cinnamon, nutmeg, etc. - depending on what fruit I use and what I see first in the spice cupboard. It's been a lot of years since I made the variations, although I still make the banana version every so often.

I am going to try it. Got the sour cream and have two brown bananas I through in the freezer to use when I am ready. I just hate to use the oven in the summer.

It's in the oven...I actually did ONE more substitution...I used whole wheat flour instead of regular flour...(a balance in health to offset the cream cheese, butter and sugar ;) I also ended up using one whole mango and 3 bananas lemon cream cheese frosting...YUMMMY I have a bundt cake recipe that my nephew made recently that was to die for....I'll have to post that one later too. It was a Paula ? (the southern chef lady...recipe) He also made some substitutions and it was yummmmy

Just posted this on the Cooking Forum. It is very moist due to the oil and the pineapple. Hawaiian Pineapple Banana Bread 3 cups flour 2 cups sugar 1 t. baking soda 1 t. cinnamon 3/4 t. salt 1 cup chopped pecans 3 eggs, beaten 1 cup vegetable oil 2 cups mashed bananas (about 5) 2 t. vanilla extract 1 8 oz. can crushed pineapple, drained Preheat oven to 350 degrees F. Combine dry ingredients in a large bowl. Stir in nuts. Combine wet ingredients in another bowl. Mix wet ingredients into the bowl of the dry ingredients. Mix just until all is moistened. Put into two greased and floured regular (8.5") loaf pans. Bake for 1 1/2 hours at 350 degrees. Cool in the pans for 10-15 minutes then turn out onto a rack and cool completely. Makes two loaves. I've used this recipe numerous times and have never had a problem with it getting done. Is this the recipe you used? Sour Cream Banana Bread 1 cup sugar 1/2 cup oil 2 eggs 1 cup mashed bananas (2 medium) 1/2 cup sour cream 1 teaspoon vanilla 1-1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt Preheat oven to 350F. Grease and flour bottom only of a 9 X 5 loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour cream and vanilla, blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking soda and salt, stir just until dry ingredients are moistened. Pour into prepared pan. Bake at 350F for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely. Wrap tightly and store in refrigerator. Makes 1 loaf.

I was gonna make banana bread today and mine doesn't call for sour cream.....happen to have the recipe?

this is the one I have posted lots and made lots and lots have made it as well

Sour Cream Banana Bread

1 cup sugar

1/2 cup oil

2 eggs

1 cup mashed bananas (2 medium)

1/2 cup sour cream

1 teaspoon vanilla

1-1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

Preheat oven to 350F. Grease and flour bottom only of a 9 X 5 loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour
cream and vanilla, blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking soda and salt, stir just until dry
ingredients are moistened. Pour into prepared pan.

Before asking here, I googled it. Found one that made "4" loaves and only had 6 bananas in it....? So I got impatient....made up my own. I'll post it in tomorrows recipe thread.
