caramel corn recipe

Told a friend I would email her my caramel corn recipe, so I thought I would post it here too. I don't like a real sugary caramel corn, so I use more popped corn than the original recipe called for.

CARAMEL CORN

16 cups popped corn (originally called for 12 cups.)

1 stick butter

1 cup light brown sugar

1/4 cup light Karo corn syrup

1/2 tsp salt

1/2 tsp vanilla extract

Mix everything but the popped corn in a deep sauce pan and boil over low heat for 5 minutes.

Put the popped corn in your largest baking or roasting pan, being sure to remove all the old maids (unpopped kernels).

Pour the cooked syrup over the popped corn and mix it into the popped corn well. Bake for 45 minutes in a 250 degree oven, mixing well with a rubber spatula every 15 minutes. Be sure to scrape any dribbles of syrup off the bottom of the pan and mix them into the corn. Pour out to cool on waxed paper or tile/stone counter top. Store in air tight container. (Mine never lasted to be stored!)
