Not sorry I didn't make it!

I was supposed to make a pasta dish tonight that takes a bit of prep. But a few errands took longer than we thought. By the time we got home, it was too late to start that pasta dish.

I had made up some extra hamburgers the last time we grilled and threw them into the freezer, so I grabbed a few and tossed them under the broiler. Then toasted up and cooked some quinoa (takes like 10 minutes) and mixed it with some chopped veggie salad I had leftover. Heated up a can of beans.

DD ate the last two hamburger buns, so I decided to use the garlic olive focaccia I bought to have with the pasta dish. Too fancy to stick a cheese slice on, I used up some brie instead.

Oh. My. Gosh.

I have never tasted anything so good in my entire life. The savory olive bits and the creamy cheese add just the right touch, and I do believe the burgers taste better frozen then broiled then they did fresh made and grilled. And the quinoa salad is excellent as well - fresh tasting and different yet still familiar LOL.

Not bad for a quickie-throw together!
