What would substitute for Sour Cream?

I'd sorta like to make the Grape Salad but I don't like sour cream...neither does Larry.Could I substitute something that wouldn't make it a completely other dish???

Yogurt? and it depends on the brand of sour cream. I prefer Daisy Lite and you can thin it down with cream.

When there's sugar added to sour cream though, you really don't usually taste the 'sour' cream flavor. It really ends up tasting like a sweet cream type flavor. The recipe as noted may not bother you. My husband hates sour cream, but he'll eat dishes like these with sweetened sour cream. You may not need to use as much sugar if you use a substitute.

If I need something creamy for a sauce....I sometimes put skim milk (which always is in my refrig) with some cream cheese....another thing that is always in my refrigerator. It's amazing how little cream cheese it takes to make skim milk "cream-like'...or perhaps sour cream like. And I never use the reduced fat stuff, I also think it tastes strange. When I am trying to reduce the fat in a recipe I will just use milk....and if I am looking for some thickness, I will whirr in the blender with a little cooked rice. I always have evaporated milk but that's only for certain things where that "boiled" taste is necessary...like Grandma's rice pudding and her pumpkin pie. Linda C

Here is what the author of this recipe -- Diane Rossen Worthington, The California Cook cookbook -- wrote about why she developed the recipe the way she did. "I have tried at least 10 different lemon cakes in search of one that would satisfy my personal preference for a clean lemon flavor, a fine crumb, moist texture and ease of preparation. Most recipes called for lemon juice in the cake, which seems to cause textural problems. I finally experimented with lemon extract in the cake and fresh lemon juice for the glaze, with an outstanding result, bursting with flavor." The author goes on to say that she likes the way the cake freezes, and always keeps one on hand in the freezer for last-minute emergencies. I guess one could always make the recipe following it as the author developed it, and then make a duplicate at the same time, using only lemon juice and see what you think the difference is in taste, texture, etc.

If your sour cream walnuts are crystallizing and you want them more fudgy, you can try a couple of things. 1. Calibrate your thermometer. Check to see the temperature is accurate by putting it in boiling water. Does it read 212 degrees (or whatever boiling is at your altitude). Sometimes a thermometer will be off a degree or two. Once you know you can allow for that. 2. If you substitute a different form of sugar, the crystals don't bond. So reduce the white sugar by a tablespoon or two and use corn syrup instead. 3. The soft ball stage actually starts at 235 degrees with 240 being the maximum. At 240 you have to be pretty speedy getting the walnuts on the tray and separated, especially if you're doing a double batch. It's fine to back off a bit on the temperature, resulting in a softer creamier coating. Try 236, for instance. I hope this helps. Carol

I have seen Waldorf salad made with sour cream, but I prefer mine. I mix 1/2 cup mayonnaise, a Tablespoon of lime or lemon juice, and 2 Tablespoons of sugar (measurements approximate). Mix it well for a sweet/tart flavor and then add to the salad.

You probably wouldn't even notice the sour cream in the recipe. I have friends who try to guess the ingredients of the dishes I make. They are pretty good at it.. but I don't think they guessed there was sour cream in the grape salad.

I do think yogurt or Kool Whip would be a good substitute.

I use yogurt but I strain it through cheesecoth or a coffee filter for a few hours in the fridge. It tastes really good.

SheilaJ's sounds good too but if I remember right I don't think CR likes mayonaise or is it Miracle Whip?
How about just plain old whipping cream (whipped of course) with a little sugar added?
