Cuppie Cake Idea

It's 101 degrees in my part of TX and I came up with this...

or maybe I stole this idea ............Beloved was going to a Ham Radio Bash this weekend...It's a bunch of people that get together and do ham radio contests and presentations etc etc...It starts early in the morning on Saturday and lasts for two days ...They have lots and lots of good food and the owner of the ranch where it is held, has Cooper's Barbecue from Llano, TX come out and do the Saturday night meal and they do it right...so I wasn't going but wanted to contribute so I sent a big sack of home grown tomatoes and desserts. I made 3 dozen cupcakes and some brownies...Now it's hot here and I didn't want the cupcakes to be all nasty and I figured that by the time he got there with them and they were eaten with all the heat we were having they would be nasty if I iced them...so I took my turkey baster and poked a whole in them and used a pastry bag and filled the hole with icing....It worked so good because I could stack them on top of each other around this big tray that I had and each one had a little topknot of icing with a blob down inside the cupcake...and they taste fabulous...I made orange and I used orange juice and orange zest in the cake mix and the others were coconut that I used a mix for but I added fresh coconut, walnuts, and instead of water, I used vanilla yogurt..........These were positively delish and so easy to eat with no nasty messy icing to deal with in 101 degree weather...... and the nice part is that I stacked them 3 layers high on a big tray...I arranged them so the little top knot didn't get messed and just made offset rings around the plate.

So I stole the idea from the Little Debbie people and what's the other company that makes that little cake with the banana stuff inside? Oh yeah it was Hostess Cupcakes and remember Twinkies...
