Is texturing a kitchen really necessary before painting?

Here is the thing. We are redoing the kitchen; restaining, sanding and varnishing the cabs. Granite countertops, new sink, tile floors We decided to remove the wallpaper, texture and then paint.

Question: Who says that we can't just paint over a sealed sheetrocked wall (s) and possibly put in 'texturing' granuals in the paint? Has anyone done this? Would it be 'wrong' to do this and match the rest of the house? Any pictures, input would be so very much appreciated. btw: we got a quote for texturing and we felt it was way too much, which got us thinking....why?
