First time water filtration questions

While installing the plumbing for our kitchen, the contractor assumed we would have a water filter which we've actually never had before. Before deciding whether to have him remove the pipe, we thought maybe we should consider it. His recommendation was for the Everpure 300-M--I took it that was because that's what "everyone" in my area is using. But, of course, I had to come to GW to see what the people I really trust think!

I have read the online threads that urge me to find out what I'm filtering for...but in the meantime a couple of other questions about what I'm reading. The filtration systems indicate a certain "gallon capacity", eg in this one it is 500 gallons. The plumber said that is how many gallons I get before I have to change the cartridge...but that doesn't sound like very much. Is it? Can anyone provide any insight into how long certain capacities last? This has a 1/2 gallon per minute flow rate.
