countertop ideas

we are considering soapstone or costa esmeralda granite for our kitchen... recently, though, we had some preliminary construction done and through a chimney removal and some other demolition, we gained a corner and a lot more space.. which is great, but it means more counterspace as well.. we are thinking soapstone or our granite of choice might be prohibitive.

So, any ideas for a less expensive granite or quartz material for our kitchen.. we haven't picked out cabinets yet, so we are flexible in terms of color choice.

We live in a 135+-year-old farmhouse, so we do not want anything too modern-- we are also not interested in concrete. I like some sort of stone material since I do a lot of pastry (I appreciate the cool temperature of the surface).
