Soapstone - I'm in love...will it work for me?

Help me convince hubby that soapstone is an option. We have 5 (soon-to-be 6) kids so it has to be durable and low maintenance. How often do you need to seal it? How does price compare to other counters? We have zodiac now and like it, other than the few chips we have in it. We will have a very open floor plan similar to this

with lots of wood. I am lusting after JOLSONGOUDE's kitchen seen here

and have always liked the look of the light maple with the dark counters. I posted a while ago about really wanting a white kitchen, which does not fit in with the rest of our (heavily wood) open downstairs, but after seeing Jay's house, Im am warming up to the wood. Can anyone with soapstone chime in?
