Sink options-- advice please

In our last house I spent the most time picking out a sink.. finally someone from this site sent me a spreadsheet with almost all available sinks in my price range, dimensions, material, etc. I don't need a spreadsheet, but I am looking for recommendations... here's a bit about hour house/kitchen:

It's a 135 year old farmhouse (more or less); we will most likely be getting soapstone or costa esmeralda counters; wood (not painted) cabinets w/ some open shelving.. no upper cabinets).

We have four children and I've always used a SS sink (LOVE SS). On the other hand, since we have a farmhouse, I feel like we should get an apron sink.

Here's why I'm afraid of the apron sink

1) installation nightmare

2) cracks

3) afraid it will stain/ look dingy

4) getting a good fit w/ our sink base (heard they can have +/- 2% variation in size

We are also wondering if we'll get a satisfactory look w/ an undermount SS sink and a good faucet (I've seen a few period kitchens w/o the apron sink, but with really beautiful faucets .. overall it was a good look, I thought)

any ideas? Does anyone regret the farmhouse sink? Anyone opt for the Rohl sink base/support instead of a cabinet?
