Comments (15)I too would like to find a replacement for the old countertop wooden block. Takes up too much room, yet they need to be handy. I am also sick of the look. Not modern enough and too much country kitchen looking. Mom has the magnetic strip and likes it, so maybe that is what I will try next, though I do not like the idea of drilling holes in my backsplash....I also have the wooden drawer insert, which I also like, but have run out of room for that too. Comments (9)I got a rail system as a test and took it back. The reason was perhaps personal taste. When I tried the rail system, I had wall cabinets mounted 18" up from the counter. Altho the rail and it's gismos could fit there, it was a big pain to put things into the system and take them out. So, taking a bottle out of the upper level of a two tier rack hit the bottom of the cabinet as did tools in and out of a tool holder. It couldn't fit my favorite brand of paper towels in the size roll I use and I don't use the really huge rolls. I think a rack would work for me if the cabinet spacing was at 24" or if I didn't have any wall cabinets. I don't think I could do the magnetic knife holders mounted under standard height cabinets either. Comments (11)The best bang for the buck in kitchen knives is the Victorinox Forschner line, available at Amazon and elsewhere. These are high quality stainless steel knives with slim blades, good balance, and ergonomic Fibrox (non-slip black plastic) handles. Regularly top rated by Cooks Illustrated. They are made for professional cooks and you'll often see them in a restaurant or butcher. I've had some for 20 plus years and I like them better than my Henckels and similar. The blades are made in Switzerland and will hold a 20 degree per side edge. There are a couple of different sets, which are nicely selected because they include useful and decently large knives. Most sets have a bunch of useless little knives, paring knives and short slicers and so on. I helped a friend pick a set for his wife last Xmas, plus a block to fit, the whole thing cost about $140 and she loves them. We added a 10" chefs which is the most useful knife of the bunch, so make sure your block has enough large slots. Or you could get one of the roll sets and a magnetic holder. These are not the very best knives, but they are better than any knife for up to 3-4X their price. And far better than the knives sold by Wusthof, Henckels, etc (and certainly KitchenAid) for a similar price, which are made in China with clunky thick blades of indifferent steel. The exception to that last sentence is the Dexter Russell knives sold in restaurant supply stores, which are made in the USA and also intended for professionals. I prefer the Victorinox but the Dexters would be my second choice. Whatever knives you get, get a steel and learn how to use it, and get a sharpening machine or learn to use sharpening rods or stones. Comments (30)I have several sets of both types and my favorite are serrated. I bought this set years ago from a co worker whose child was selling them for some school project. They are very basic, look like all aluminum handles. I wish I could find more of them. Over the years a few have disappeared. I do have a full set of Chicago cutlery in a wood block holder, excellent knives, had those for years too and never sharpened. My favorite big knives are my ceramic blades, all I use now, I have several large sizes. I have been looking for a good set of ceramic steak knives. After searching on amazon I really think that the knives I have and love are Rada brand made in the USA since the 1940s and are used in those types of promotional fund raising sales.
