Living with Dark Counters or Jet mist

I know the topic is vague and broad, for that I am sorry :/ I am in the midst of deciding on a countertop. We might need 3 slabs, so that is messing with our budget (Wanting to stay under 7k). I initially always wanted an all white kitchen but am now drawn to dark counters. Currently we already have custom white shaker cabinets. Galley kitchen with white appliances and farmhouse sink.

I love the classic look of the black though.

Love soapstone's look but not the maintenance and patina. But I am curious about jet mist.

My questions are: Are dark counters miserable for cleanup and care? We have a young children and know there will be crumbs, fingerprints, wont be able to wipe the counters all day long.

Anyone with personal pictures of Jet mist?
