Beauty in scorch marks, dings, dents?

We are thinking of getting IKEA butcher block countertops on the counter that flanks our stove. During demo, we've uncovered fir floors.

I'm thinking of really USING those BB counters, cutting (not meat) and putting down hot pans, etc. And I know the fir floors would be soft and ding-able. Our family is not easy on things! :)

But to me, this will look great! Like a kitchen that is used, and has a little character. Our other countertops will likely be Casearstone, we have SS appliances, white painted cabinets....It seems like the natural wood with all of its imperfections will be nice.

What's your philosophy...will I regret it? Anyone have relevant photos?
