backsplash question- advice please!

We finally have cabinets and countertops installed and are ready to do the backsplash. I'm planning on a basic white subway tile, probably smaller than the standard 3x6, and gray grout. The upper cabinet in the picture below is hung higher than normal because we are going to install an open shelf below. I would like the backsplash to go up to the bottom of the hood vent but I'm not sure how to layout the backsplash on the rest of the wall. Should it rehang the vent to line up with the bottom of the uppers and take the tile up to meet them (all the way across)? Something else?

I also considered taking the tile to the ceiling on that wall but there is not a logical stopping place as it would probably look strange to stop it at the line created by the doorway.

I'm also looking for advice on how high to take the backsplash on the sink wall- do I need to take it to the same height all the way around? I was thinking about going 18" on that wall.
