You're going to want the front of the hood to extend over the front burners to the edge of your range. That is why a 27" hood is typically chosen with a high powered regular depth range. It will cover the front burners adequately. Unfortunately, you bumped out the range area, so that means bumping out the hood to match. This is going to prove an issue with the grease capture mechanisms of your hood. It's not just about the capture area, it's about the screens that cover the capture area to trap the grease. You're talking about adding around adding a foot of depth to the insert that will need to be covered with an inflammable and easily cleanable material. I suggest stainless rather than tile because of it's lack of grout. You will need a custom metal worker to make the coverings, and the bumped out area should have cement backer board over the framing and then the stainless covering. Every step of this will be super custom and very tricky.

The 30" clearance is to any wood surface of your hood. If you want the hood lower, then you need to cover the wood with stainless. It is measured from your cooking surface, which is the top of the grates, not the top of the range.

It's not too late to rethink your range bumpout.

I ordered the hood liner from AJ Madison. Should I try to exchange it for a 27" deep (or deeper, since I have the depth) custom liner? That way we might be able to negate the need for custom SS capture area.

Other options?

Have seen plumbing for potfillers but never electrical outlets directly behind a high powered range. Code? Won't those those need to move?

Good point on the outlets -- I can't imagine keeping them there, even if code allows it (but I bet you're correct that code doesn't allow it). They will melt with the CC burners cranked up.

On the hood I suggest you have a custom hood or liner made by Modernaire. With the bumpout you will have a non-standard size.

I don't think we are going to be able to exchange the hood so we will be building a custom capture area. Live_wire_oak -- really appreciate your thorough reply, you did answer a lot of my questions.

DH is very handy so we're ok with building the support/custom hood frame. I take the point about SS vs. the grout involved with tile.

Should I talk to my CT people re custom SS piece for this? I'm not sure with which yellow pages category to even start this search, otherwise.

Call a restaurant supply place or ask a newer local restaurant who they used. You can look around at premade liners and see if you can find one that fits the Prestige (asking them might be worth the call?).

I realize you're making the hood yourself, but the cabinet company may offer a stainless liner for their own hood cabinet that you might buy separately.

Now would also be the time to check on whether the backdraft stop part is built into the blower or whether there needs to be one installed on the duct - which seems to be mia? You need to know where the duct connection is before you set the height.

The outlet thing is because they are plastic and according to the installation diagram would need to be at least as far away as a cabinet or other unprotected surface (believe its 12 inches to the rear). The mfg specifications are king - code normally says to do whatever they say. Plus - the inspector might get concerned about the potential for cords draping over burners.

Last note. fwiw, is that we found building a hood cover to be very difficult. There are all kinds of difficult angles to work out and it needs to be fairly strong. Clearances are small and its tough to make it turn out right. If I ever do another kitchen, I'm buying a hood.

I'm sure someone, somewhere has put electrical within the range guard area but I expect it's against code for a host of reasons.

Also, no matter how far back they are-- even from a bumped out range -- I question the safety in that location vis a vis the possible issues they present. Guess I don't understand what electrical appliance would be plugged into a wall with a cord trailing near/over burners in the 20K world.
