Polished marble subways for backsplash? Etching worries?

The painters have begun and soon it will be time for tile. I've been planning to use honed calacatta 3 x 6 tiles for the backsplash behind my stove. I ordered samples of both honed and polished and wouldn't you know it? I fell instantly in love with the polished. The range will sit in kind of an mantel-styled alcove so the backsplash will be recessed. The tile won't get tons of light shining on it. I know many of you love your marble counters, but most seem to choose honed. Do you think polished would be safe for a backsplash?

Also, I know splashes of tomato sauce would etch the marble. What about grease spatters? Thanks for any insights!
