Cabinet finishes, processes, colors, durability. . . .

Our house is old (1927) and has unpainted, stained gumwood throughout.

I am worried about putting in new cabinets because the finish will look new and the cabinets will look like they are dropped in to the house.

I am also worried about using a different wood from the gumwood. There are some doors made of gumwood that will be visible from the kitchen.

All along I have been thinking that I want stained wood, probably cherry in a dark or medium dark shade, but this concern with the finish is actually making me think that a painted kitchen has a better chance of looking like it is original. (Perhaps I can retain some of the gumwood . . .)

Those with old houses -- any thoughts?

I have had some chats with Kennebec--- they say they use a different finishing process that is not a catalytic lacquer, but more like a furniture finish. But I know they will be very expensive, likely too expensive.

Would appreciate any thoughts about finishes -- specifically low-no luster. Has anyone compared finishes among the cabinet makers? Are there really any differences?
