Kohler Stages Owners & Walnut Counter Owners--Question for y'all

You may recall I have the Kohler stages sink in my island. The granite fabricator cut the hole a little too small and my cutting board and accessories didn't fit.

A friend who has a woodworking shop like nobody's business, shaved the cutting board down as well as the trays.

They fit like a glove.

Question, what the heck do I do to the walnut cutting board? It was washed once or twice after use and it was so dried out! I just dug around and finally found my bottle of Boos Mystery Oil. I treated it with that, but really, what should I be doing to this in order to make it not dry out so badly so quickly?

Also, do you know if hard water is tougher on it than softened water? I think we need to get a water softener here, the water is very hard and I think this might be what is etching my counters!!! There is no shine around my faucets any more. I try to dry but there are others who use the faucet! ugh
