I have been gone so much...my 2200 mile bike trip and then other trips and we are leaving again soon for the PNW and CA till Fall . Here is a small sample of what we have been eating .

DH is now officially retired "YEAH" so he is making pasta every chance he gets. I made ciiabbata and baguettes. A friend gave us lovely home grown tomatoes and I have my herbs so here you have it. A lovely red wine and cheese from the new market in town as we are set for a very HOT night in AL. We have had unprecedented heat since June 1st ,hence our trips away. Hope others will post the pics of their kitchens in the heat of Summer. c

I really found this to be tasty. First the original recipe that prompted me to try it. One-Pot Spaghetti From Better Homes & Gardens 8 ounces ground beef or bulk pork sausage 1 cup sliced fresh mushrooms or one 6-ounce jar sliced mushrooms, drained 1/2 cup chopped onion (1 medium) 1 clove garlic, minced 1 14 ounce can chicken broth or beef broth 1 3/4 cups water 1 6 ounce can tomato paste 1 teaspoon dried Italian seasoning 1/4 teaspoon black pepper 6 ounces dried spaghetti, broken 1/4 cup grated Parmesan cheese 1. In a large saucepan cook the ground beef, fresh mushrooms (if using), onion, and garlic until meat is brown and onion is tender. Drain. 2. Stir in the canned mushrooms (if using), broth, water, tomato paste, Italian seasoning, and pepper. Bring to boiling. Add the broken spaghetti, a little at a time, stirring constantly. Return to boiling; reduce heat. Boil gently, uncovered, for 17 to 20 minutes or until spaghetti is tender and sauce is desired consistency, stirring frequently. Serve with Parmesan cheese. Makes 4 servings. First, I mixed a half pound of sausage (Jimmy Dean Hot breakfast style) with half pound of lean ground beef but could easily have sufficed with less meat, but I like a lot of meat in a dish. I fried off some bacon, then cooked the meats in the bacon fat. Added some pepperoni, lemon pepper, crumbled bacon, just a tiny squirt of BBQ sauce, some green pepper and some celery seed. Naturally I omitted the mushrooms! Leftovers reheated well for several days, but I did add a touch of water to it when reheating. Served it with a salad and garlic bread. It's not going to replace my conventional spaghetti dinner but occasionally, it's quite tasty, very easy, and not much cleanup since I put the leftovers in the frig in the pan.

Posting a follow-up on the Pesto Cheese Torta. Was able to get lots of fresh basil from Trader Joe's, so I gave this a try. It presented so well and I received many compliments and requests for the recipe. I served it on a large square rimmed platter w/ a pedestal base with TJ's plain & whole wheat pita crackers surrounding it. Unmolded the torta itself on a small clear glass plate. I placed decorative green leaves under it and set it in the center of the platter. People loved it! I found I needed a larger container (32 oz.) than olychick noted to fit in all the cheese & layers. Otherwise, the recipe & instructions worked perfectly. Note that this is a VERY rich spread. If you're making it for a smaller gathering and don't want a lot leftover, I'd suggest making half a batch.

Tonight I put the pizza stone in the grill and baked Salmon with doctored up Costco Pesto sauce on top in an old deep dish pizza pan. Husband said it was the best I have ever made. It was served with Costco prepared couscous with an extra squeeze of half a lemon. Lunch was Costco prepared brushetta over Costco sliced demi baguettes, a little Costco crab dip and array of fresh fruit. Tomorrow will be leftovers from all the above. I think I will be shopping at Costco a lot during remodel and will cook up the large quantities of chicken breast packs on the grill, putting in zip locks and freezing. I will have lots of fresh veggies on hand as well as instant rice. Now that I know I can use my outside grill as an oven with the pizza stone in there I dont feel IÂll really be that limited and will even give casseroles a try using the already cooked chicken. I never had much counter space anyway so maybe this wonÂt be so bad.

Trailrunner--great to see how you use the countertop to make pasta. Makes me excited to anticipate tomato season. In Minn. we're just beginning to harvest peppers, zucchini, tiny eggplant, green beans. Broccoli has been great guns this year--now unhappy in the heat. Have just given away most of my overgrown zucchinis--they're still a treat for others. Have been making basil pesto but not worth a photo--it's just a blender with green goo in it. You can even make it in a camper trailer, if electric power is hooked up.

Why are you making us suffer? You know that carbs are killers for most of us and yet you continue to make those gorgeous, crusty, tasty, breads? Oh, why, why, why??? And no matter how well and often we loosen our pants, and wear pj's, and elastic whatever, whenever you post your darned golden, ochre, carb laden specialties, we suffer immeasurably. And you don't care a hoot!!! As long as you and King Arthur are happy!!

plllog: elizpiz waved the other day and asked where all the KAW's had gone so I thought I would surprise her. I hope she comes around .

I meant 3200 mile bike ride LOL. From Saint Augustine to San Diego this Spring. Don't know how I forgot 1000 miles :)

Here is a final pic of the dish with the pasta. You let the fresh tomatoes marinate in EVVO and salt and pepper and a bunch of minced fresh garlic and basil/thyme . Then drain the hot pasta and toss with the dressing and add cheese. We have a new Earth Fare and it has been wonderful. We are loving the selection.

How do you forget 1000 miles? Probably somewhere between the Mississippi and the Colorado. There's some beautiful country in there, but it does tend to all look the same in some places after you've been staring at the same view long enough. (Very Big Grin)

Yeh plllog: I was in a daze I guess. I left Feb 26th with a couple other folks and we finished 62 days later. The country was amazing. I saw so much and met the MOST wonderful people along the back roads of America. And the food...oh my...I lost 8 # and never stopped eating. Unfortunately that is ALL back...need to get the "stop eating " back in place ! The Colorado River and the Little Colorado were gorgeous. We camped by both. And so much more...I took 600 photos and the others I was with also did and we shared the albums so I have about 2400 photos ! Someday I need to sit down with them all...sigh. c

C!!! Thanks for popping back in with your goodies - oh my, everything looks so wonderful. I can almost taste those tomatoes. Harvested our first one this week (it's the blurry pinky one in the foreground) and lots of green ones on the vine.

Yes we stayed in what is known as the Southern Tier. Saw 1000 miles of TX !! That is a lot of TX. c

So you are back with this food porn stuff, eh? Just what are we are waddling dieters supposed to do about you and your wicked ways with these photo temptations ??? Actually,its great to "see" you again, Caroline! Your recent bike trip sounds fantastic.

BTW, don't know if you saw that we might be trying to get another NYC GW TKO thing going in the next couple of weeks. Cat has already informed us you can't make it. Now I can see why. Between making sinfully good-looking food and showing it to us, and biking all over America, I can't imagine you have time for much else!

Lordy Lordy... that pasta dish is EXACTLY up my alley. DH enjoys things like that too but the man needs his meat or thoughst will complaineth. I don't really eat meat so I LOVE LOVE LOVE pasta and fresh veggies. The carbs may not love my rear all that much but I do so love them.

Caroline... it's great to see you back with your food porn. Your long road trips are an inspiration!

WOW you guys are so great. It is good to be back. I sure do wish we could make it to NYC, Martha. We will be there the 1st week of December to celebrate my 60th birthday. Can't get there sooner as we are going to Seattle and then Vashon Island and then San Diego CA for 4 weeks. We will be travelled out by then I am thinkin.

hellonasty: THANK YOU ! I will link to it below. It is the French Bread from a forum I frequent, The Fresh Loaf. I get a lot of ideas there. This particular bread takes 3 days but is worth it as it is quite easy to do. I sure hope you will post lots of things from your new kitchen ...we love pics of Kitchens in Action !

prill : it sure was. I still can't believe I did it. Have no other plans to do it again as I don't want to be away from DH that long ever again. He is my rock .
