Acid wash finish marble countertop?

Hi, we're renovating our kitchen and are down to the crunch on getting our kitchen countertop fabricated. We saw the marble slab that we would like to use at our fabricator's - Nero Marquina. It is polished and we want a honed marble counter. So, the fabricator applied a wash to a sample and removed the polished finish. We've been doing some research about this process and found out that it is an acid wash finish and not a honed finish. He also applied this wash to a white marble sample that we were interested in and it remarkably etched the white sample.

The honed sample we picked up at another supplier seems softer (and therefore lovelier). I'm not sure whether to insist on ordering a new honed slab or whether to live with their method of removing the polished finish. Another consideration in just going with the fabricator's method is that the marble will undoubtably etch and develop it's own patina over time.

I'm looking for any comments on which direction we should take - go with acid wash or order honed.
