Honed white or off-white granite or butcher block?

We are thinking about using a honed white or off-white granite on our kitchen island. The island will be used for food prep (with cutting board) and eating. Is a honed light colored granite practical? If it's sealed, will I still have to worry a lot about it staining? I'd love any advice you have to offer, and would also love to see a photo of a honed light colored granite counter if any of you have one. The alternative we're considering is butcher block. I'd like to go with the most practical. We've got kids, so it either will take a bit of a beating.
