Save backsplash, replace counter

We're buying a house with a tile counter and backsplash. The counter is pretty battered, but DH loves the tile and would like to keep at least the backsplash. Is it possible to remove the counter and replace it? The tile is blue and white "country French" clay tile probably installed in the 1980s (judging from the style of the cabinets) and I would like to replace it with a creamy off-white or possibly a pale, cool gray quartz composite (other suggestions?) The cabinets are white and we will probably re-face with new white doors.

The sellers are claiming that the tile dates from the 50s when a B movie star built the house, but the microwave hutch and the fancy, built-in refrigerator hint to me that they're handing out a bunch of malarkey!
