SS backsplash behind BS rangetop

Okay, I pulled my BS out 3" and the vent hood too.
I know what to do for the vent hood gap and having it go down the wall. I know it has to go 6" below the BS's top.

I am not sure about the island trim. Is it needed since there is no oven to vent? I found two of my pots that don't center on the burner because they bump into the island trim.

Next question? What do I do about the 3" x 36" piece of counter (technically it is a hole) that goes behind the range top? Seems like such a waste of granite, plus my slab isn't big enough to leave it whole.

Will they do a two seam bridge?

Would it be better to put stainless there? I can't figure out how to put SS 6" below on the wall, then also have it cover the 3" x 36" piece. It would have to be two pieces, wouldn't it?
