Kitchen faucets with 2 handles - love it? hate it?

I've decided to completely abandon choosing a countertop and skip right to the faucet. (Okay not really, but I need a break from granite. Who would have thought?)

Anyhow - I noticed that a lot of the really nice kitchens have 2 handles on the faucets - for hot and cold. In fact, last night I poured through maybe 4 kitchen books and only a few had single handles. And when they did - they were all Grohe and were the Ladylux or something else similar.

So - now for the real life question - do all of you with hot and cold handles find it kind of cumbersome with doing dishes, etc.? Would you do it again?

Besides the fact that it looks great, is it worth the effort to turn two levers? (I know we are not talking heavy lifting here, just the push of a lever - but I'm curious).
